Often third wave coffee shops have an upcharge for this particular flavor profile blend. My perception is that the requisite skill for brewing excellent espresso derived drinks requires dedicated training and an aptitude for "dialing in" the coffee - akin to a trained and talented chef vs a line cook simply following a recipe.
