Our server, Carlos, was very apologetic about the long wait and explained that they are currently experiencing a staff shortage. We placed our order to share a house salad along with a harvest pizza, and requested the addition of maple fennel sausage on our pizza. Our salad was absolutely delicious, each bite was fresh and crisp and easily satisfied two hungry adults. After waiting for nearly 30 minutes for our pizza, I asked Carlos if he could check on it and though he was clearly busy serving other tables, he checked into it immediately. He came back and told us that though our order had been put into the system, somehow there had been an error and the pizza hadn't been prepared yet. He apologized profusely and said that the restaurant's manager wanted to comp our pizza because of the delay. Our pizza was delivered shortly thereafter and it was very tasty, but unfortunately, they forgot to add the fennel sausage to the pizza. Within a few minutes, Carlos returned with a bowl of sausage that we could add to our pizza, and with that addition, the pizza was simply outstanding. After finishing our pizza, Carlos offered us a free dessert. At that point, we felt too full for dessert, so we expressed our appreciation, but declined. To our surprise, Carlos stopped by our table and again and said that they wanted to comp our entire meal to make up for the errors. What a pleasant and unexpected surprise--this kind of service has become increasingly rare. We were so impressed that I wanted to write Flatbread Company a 5-star review for the outstanding preparation of their food, their phenomenal customer service, and in particular, to Carlos--for providing us such attentive, over the top service and remaining calm and professional while serving a significant number of tables on a busy Sunday evening.
