We went to Carlsbad flower field visit, we saw this restaurant in area and wanted to try. Got there at 6:00 pm nice, clean place, nice staff. We had masala papad, pav vada, chole bhature, and indi chini sizzler. Papa was good. Vada pav was good as well. Indi chini sizzler was NOT good Manchurian balls were dry as bone, no veggies in there, just couple of stands of carrots mixed with flour. It was dry and chewy and stretchy. NOT flavorful at all. They topped whole sizzler platter with manchurian sauce. Wanted to taste fried rice and noodles taste seprately. Wont recommend that. Bhature were bit oily, chole were flavorful. Amazing hidden gem in a mall. Its in a very busy location and recently opened. The owner and staff are very nice and very hands on. Service is fast and lots of options for Vegetarians and meat lovers. Tried the vegetable barbecue sizzler and it was pretty decent. Very flavorful esp the chutney. The chatpata dosa was average, I wouldn't try it again, same for the chutney and sambhar. The vegetable jalfrezi and naan was absolutely amazing!! We couldnt stop eating. We recently got a recommendation from a friend to try this new restaurant in town so we decided to give it a shot. As soon as we arrived, parking was easy since this restaurant is located in a mall. There was no wait time and we were seated almost immediately. We got a thumbs up cold drink because it had been so long since I had one. We also ordered the chicken biryani, paneer balti and jaipuri veg. Since the gravy items came with rice, we only ordered 2 portions of garlic bread to share amongst 4 of us. The food came out pretty quickly. The presentation was 10/10. However, the quantity looked less for the price. We decided to stop overthinking and dig in. The biryani was flavorful and cooked to perfection. The paneer gravy had a pickle like taste and had an interesting flavor. The jaipuri veg was tasty and packed with vegetables. The garlic bread was roasted well and was soft. Overall, the food was authentic and tasted great. However, we felt the gravy portion size was too small for the price. Tears of joy when we saw the Sankalp marquee going up, and more happy tears when we took our first bite - Sankalp is excellent! There's more and more Indian places popping up in the area over the past few years, but Sankalp easily tops them all. Prices reflect the quality of food, menu, and ambiance. It isn't cheap, but neither is anything about the experience. The menu is expansive. The dum biryani is so hearty and delicious, and we love that there are dosas and uttapams on the menu as well. I only managed to capture a video of the soup because I started digging in before I even thought about taking pictures LOL. The flavors were exactly what they needed to be and more. Everything tasted fresh, balanced, and full of depth. A pleasant gentleman came over to check on us and shared that their spices are sourced directly from India, which was great to learn and definitely explains the robust, authentic flavor in the dishes. What a treat! We came in without much expectation and was so pleasantly surprised by an unusual and extensive menu. Took over 10 mins to decide what to order and the food was absolutely amazing. As vegans, my hubby and I really appreciated the staff's deep understanding of our diet--they didn't just point to the vegetarian menu. The Traditional Masala Dosa was perfectly crisp, non-greasy, and served with flavorful sambar and delicious dipping sauces. We also loved the Veg Jalfrezi (ordered without onion/garlic); it was creamy and vibrant with a kick even at a "mild" spice level. Easily the best Indian food we've had in the US. We came in for the lunch special which is only takeout, which is fine because there is some public seating in the mall that we could sit at. When the waiter asked us what we wanted to drink we said water and he rudely said water is right there and pointed at it. But we meant that we wanted water to go so that we could eat it with our takeout food. He didn't ask how spicy we wanted our food. We asked for medium spice and it tasted like a 2/10 spice level. Wifey recognized this new restaurant in Carlsbad close to Legoland. Sankalp is a major Indian chain most well known for its South Jndian cuisine. It doesn't disappoint, crispy crunchy dosa with masala potato filling, legit Mumbai vada pav with methi masala, sumptuous chole bhature, and paneer pakoras that are kid approved. Mango lassi actually made with yogurt so you know this is authentic Indian food. Service is prompt but be aware dosa takes time to prepare. Will return again! read more

Stopped by this place while we were in Carlsbad since it seemed new, with a good rating. We ordered the bhelpuri which was delicious, followed by the Masala Dosa, which was good too. However, the Coconut chutney (provided with the Dosa) was rancid, and we returned it promptly. But no acknowledgement from the serving staff and casually the transaction was closed without any mention of what went wrong with the chutney. It's so nice to have an Indian restaurant at the mall now! We've ate here twice and both times they had great food, kind staff, and no wait. We typically grab dinner before seeing a movie, and the staff was accommodating when we said we needed the check as soon as the food came out. They have a good selection of food so everyone in our party was able to find something they liked, and it was all easy to share. The water pitcher they give you to share is pretty small if you have a larger party and we kept running out, but the staff was quick to bring us more when we asked. I came to visit Carlsbad. Several people mentioned this new Indian restaurant in town. Sankalp is part of a Chain Restaurant in India. Ambiance is like a fast food place. Looks like thid location may have had another food joint. With an extensive menu, don't expect everything to be tasty. Our group of 7 ordered both North and South Indian dishes. North Indian dishes were reasonable, nothing to brag about. However, Sambhar with Dosas and Idli was the worst, I have tasted over many years. With no vegetables at all, and lack of taste, it seems to have been made from a Sambhar pouch added to hot water, and Chutneys were not fresh. Service was really poor. The waiter was completely untrained, possibly a family member! I ordered a Rava Masala dosa. It was not like a dosa, but a flat crispy pancake, with Its Masala served in a small bowl, whose potatoes tasted spoiled! Half of dosa's layers fell down on the servers tray. He asked me to hold the plate, and took back the remaining half. Didn't apologize or bring back another dosa! Such poor service, doesn't even deserve an automatic 20% service charge, but he suggested that I could add tip! While sitting in the car, almost everyone said that we are not coming back here! read more
