On the table was soy sauce and low sodium soy sauce which was what I used on my white rice. By the way, "Kimchee" is not a misspell; it's actually the Korean spelling to the more popularized Japanese spelling, "kimchi". Kimchi is a banchan/appetizer by itself but can accompany anything to kick it up a notch.  It's also a great source of probiotics. I most often add it to my rice dishes being Asian American and all, but I am looking forward to try it on a burger next time I get a chance -- a tip I just heard from Kevin the co-owner.  Joyce ("the" kimchee girl?) & Kevin operate their business with heart and soul and I won't hesitate to recommend that you to give their kimchi a taste. Kimchee Girl takes online orders for its kimchi products, but it also sets up tents outside of its office during the week and offers BBQ lunch boxes such as bone-in pork chops, kalbi short ribs, and (I haven't tried) Kimchee dogs. All of them of course feature their flagship Napa cabbage kimchi.  They also do pop-ups from time to time at events and farmers markets.
