While I've never been to Detroit I've now tried Detroit style pizza at five different local businesses. So, I can't tell you who makes the most authentic version, but I can tell you which one I like the most and how they are different. Today I visited Rustic Pizza and Eats (technically in Wilton but close enough to be considered Saratoga Springs). Coincidentally, I was last in this same building over twenty years ago while Mino Kawaguchi was serving sushi in his Japanese restaurant. While the sushi bar and hibachi table are gone not much else has changed. There are maybe a dozen tables, some of which can be slid together to accommodate larger families or groups. Upon entry you are greeted by a sign directing you to pick up menus, choose a table to sit at, and place your order at the counter. My sole purpose in coming here was to try their "Detroit Meets Rustic" pizza ($22; toppings +$3 each). The pizza meets the qualifications to be considered Detroit style by being rectangular, having crispy, caramelized cheese around the edges, a crispy bottom, and a thick tomato-based sauce. I can't say for sure if the sauce was applied in strips or if they used Wisconsin brick cheese, but the combined flavors of dough, sauce and cheese were very good. I opted to add sausage and roasted peppers. I didn't notice any fennel flavor in the sausage which is something I enjoy. The dough, especially in the center of the pizza, was not as light and airy as found in the Walt and Whitman's version of Detroit style. I wonder if an establishment that only makes Detroit style has an advantage of preparing all of their dough in a single style 24 to 48 hours in advance over the business that must be prepared to serve multiple styles of pizza. Or is it possible that a larger pizza is less likely to be light and airy in the center? Rustic's Detroit style is considerably larger than any of the local competitors' pizza. I can finish a whole Detroit pizza at Walt and Whitman or Korner Bar & Grille, or from Pizza by Plu; but I only made it through three of the eight slices at Rustic. My wife tried their Soft Pretzel Sticks ($9) served with a cheese sauce blend. She was pleased with the quality and flavor. I tasted a bite dipped in the cheese sauce and thought it was a decent starter, fresh and hot. Beverages are bottled water (Poland Spring [$2.50]), iced teas ($2.65), and various canned and bottled sodas. Service was friendly and prompt. Noise level can be high when almost all the tables are filled.

Undercooked cheese pizza, with the cheese just falling off.

Pizza was undercooked, leading to a rather sloppy mess. It lacked flavor and needed a lot of help with salt and pepper. The inside was nothing special and could look a little more cleaner. Had to wipe down our seats before we sat.

That fright disappears quickly though once you're inside. Bruce, the owner, is happy to school you in the 5 sauces, and also give you ice cream samples. He makes everything right here. It's a passion project for him and frigg'n delicious. He's happy to talk..... about anything. He's just happy you're here. There are a couple tables that you can sit at inside. But beware, despite its proximity to Saratoga, this is the furthest thing from pretentious. If you're looking for a sit-down dinner with waiters.... This Ain't It. The ice cream is flavorful, unique, and easy to keep going. The strawberry lemon ice is INSANELY delicious. You can taste the freshness of the berries. Soooo good. Soooo refreshing. It's perfect. Well... maybe a hint of a mint leaf might be nice. The barbecue is spot on. The homemade sauces...just take his advice. Have him sauce the meat she way he wants. You won't be disappointed. The "sampler trough" could use some work. It's delicious, but everyone wants a well parsed out sampler. We want to try it all, Bruce. So... may we suggest some small metal trays for the base. Then... pickles, add the beans, potato salad, Mac n cheese, and some kind of bread to mop it up. We tried it for the first time, and even got "seconds" to go. You should go here, be brave. You'll be rewarded and happy you did.

Not pre packaged but made with care like everything else. Lastly, owner/proprietor, Bruce is someone who is passionate about his business. You're not eating at a chain. It is not pretentious, just good food you would find at a friends house. That's really the best way to describe the feeling you will leave with. Don't be afraid to ask about anything. Brilliant conversation is hard to come by. So this is a strong recommendation on my must-try list

Apparently, it opened within the past 5 years and it shows: everything looks to be in really nice shape. A GPS or map is handy to find this place, though, as it is off the beaten path and we nearly drove by it. Their website lists different hoursthan what their phone message says, so I would call first and hope to talk to a real person. The course is mostly grass carpet lined with bricks. There are very few ways to get your ball "off course" unless you hit it too hard adn bounce out or have it roll back. There are no tee-markers at the start of each hole. The main challanges are based on hills/slopes.. there are no windmills, water areas, sand traps, etc. to speak of. Thus, it was very straightforward if not a bit uninspired. In fact, some holes had what apparently looked like easy shots but I took the hard way just to try out the course and challenge myself. The holes did not have metal cups in them, so there were not any rims to deflect slow moving balls from dropping in. However, the thickness of the carpet all around the holes made them marginally smaller. Each hole has a history of Saratoga on a sign. There was a lounge area part-way through, and the large water feature was nice. They serve ice cream, including ice cream nachos (sounds yummy) and milkshakes, and we were told a nearby pizza place was opening in a few weeks. If you like to smoke pot (I don't), they have marajuana-themed nights as well.

The gas here is currently billed as Shell, which is unusual for the area. That's because (a) Most Stewart's shops don't list a brand of gas (and you don't always know from where they're getting it), and (b) the other gas stations the Stewart's company owns in the area are typically Mobil. The gas here is priced comparably to the stations along Route 50 in the Wilton area, such as near the shopping centers. Their lure has been to honor the Price Chopper/Market 32 Advantage Card discount. This is a convenient spot to get basic groceries without having to deal with any of the "big box" grocery stores in the Wilton shopping area, and I think a lot of people already know that. Navigating the parking lot can get crazy sometimes. You've got parking spaces around the shop, and additional spaces on the outside of the lot, plus all the cars pulling in and out for gas. I gather they began in Saratoga Springs, NY, and moved into Vermont, as well. We tried this one across the street from the Saratoga Springs Hilton where we stayed, and it was very clean inside (according to my husband who went inside). I had also read they have terrific ice cream, so guess what, we tried some. I stupidly left it up to my husband to "surprise me," and while they are known for amazing flavor choices, and thinking he KNOWS how I like unusual and interesting flavors, he walks out with a mix of vanilla and chocolate. Are you kidding me? It was especially difficult for me to keep my mouth shut because I was pissed off, but he was kind enough to get it for me and bring it out, so I could just wait in the car. I have to say, though, I quickly went from anger at the boring ice cream flavors to extreme enjoyment because it was some of the BEST vanilla and chocolate ice cream I had ever eaten. Truly delicious. I was definitely thinking we'd get some different flavors at other Stewart's Shops in the ensuing days of our travels, but as many as we ended up seeing along our way, we never did stop at any. Don't know why, but we didn't, and so, this was our only time to enjoy their wonderful ice cream !! Next time we are in the area of a Stewart's Shop, I will make sure we can get more ice cream.
