It truly is an oasis in the the bustle of Santiago. The food is simply amazing. This restaurant combines the taste of Vietnam, fresh ingredients from Chile, and the food discipline of France. The heart and soul of the restaurant comes from its three founders: a Vietnamese woman, a French man, and of course a Chilean. All of the food is great. The two salmon belly varieties had fresh truffle on top and several of the pieces had a tiny grilled foie gras on top. Really decadent. But most importantly all of the sushi and sashimi was fresh and delicious. For dessert we shared the pistachio lava cake with vanilla gelato. Neither of us are big chocolate people so we were so happy to get a lava cake that was pistachio - so yummy! I hope this is a trend that catches on everywhere.
