First, the chicken. Ohhhhh my. Melt-in-your-mouth tender, and that distinctive spice mix that says pollo a la brasa. I could have eaten a whole chicken! But I know better ... lol Coleslaw: exactly the right mix of sweet and tangy for me. Some folks don't like sweet at all, so you should know, it is a little sweet. But crispy and not at all droopy. Rice and beans: these are mixed together and it's brilliant. The black beans are cooked just enough to not be mushy, and the "sauce" from them has a hint of spice that melds beautifully with the vaguely saffron rice. Sauces: ah, here's a thing. The yellow sauce was perfect. The green sauce was FIERY. I found a good recipe for "authentic" Peruvian green sauce and have been making it at home for over a year. But truth to tell, I grow my own jalapeños and none of them were super hot. Both of us were a bit surprised at how hot the sauce was. It was just over the edge for me, and we added a little mayo (how many of you know it's made with mayo? lol) which brought it down to tasty level.
