On paper Hai must be considered one of the most promising Japanese restaurants in Malmö. The large menu offers a great variety and selection of dishes that look appealing, exciting and interesting however the way the kitchen executes the dishes is such a let down.
In our chase for the best sushi in Malmö we came across Hai. A place that looked to have all the elements necessary to be among the main contenders but surprisingly as well as sadly came up very short. What is perfect and promising here is the ambiance, the settings, the area, the menu and the creativity. What make is a let down is the kitchen under-performing in terms of quality control and "know how" as well as the inattentive service staff.
At the time of our visit the fish was not as fresh as it should have been, nor had it the right temperature. Regardless of how hot it is outside the fish, in this case uneven cuts of it, should not be hotter than a normal room temperature! The rice was overcooked and bland meaning not enough vinegared. The Unagi nigiri was chewy and somewhat rough meaning either it was not lightly seared or as fresh as it should have been. We all tend to agree it was not lightly seared due the fact that the seared tuna nigiri also looked more blackened than seared. In order to get some water to the table as well as ordering a coke we had to call upon the staff 3 times and the beverages were not even served to the table at the same time.
