The cornbread was delicious although I think I'd like it better warm. The quesadillas were great as well. I didn't much care for my Brisket Nachos. They were a bit spicy, but they lacked meat, I think. The portion size was huge. Enough for two, maybe three people for sure. The Carne Asada tacos were spicy as well. A side of sour cream may have helped. There was a sauce, but she didn't use it. Ultimately, she liked the tacos. The Cadillac Cowboy Burrito was good. The portion size was large. Presentation was nice. The drinks were ok as well. The restaurant is nice. Clean and spacious. Decorated nice ad well. Our server Cindy was kind, attentive and prompt as well.

If you're in town for a Packers game and want a place to have a drink with a good view, they've got that part figured out. Unfortunately, the food is a completely different story. I live in Arizona, where great Mexican food is everywhere. I've eaten everything from Baja and Sonoran to Tex-Mex, Guadalajara, and Mexico City styles. I've also been around enough competition barbecue teams to know what good barbecue should taste like. This wasn't Tex-Mex, and it wasn't barbecue. It was just disappointing. I ordered the Cadillac Burrito. In my opinion, it tasted like a gas station enchilada-style burrito drowned in canned queso and canned salsa. It was heavy, sloppy, and lacked any fresh flavor. Calling it Tex-Mex does a disservice to good Tex-Mex. As someone in the decorative concrete industry, I couldn't help but notice the polished concrete floors. They still have swirl marks, scratches that weren't fully removed, and unfinished edges. Most people won't notice, but I did. If that level of workmanship was acceptable on opening day, it made me wonder how much attention was given to the food. The sad part is that this place has every advantage. Great building. Great location. Great atmosphere. Right across from Lambeau Field. If Cowboy Max survives, I think it'll be because of where it is not because of what's coming out of the kitchen. Packers fans and tourists will stop in because it's convenient. Based on my experience, I can't imagine the food creating many repeat customers. I wanted this place to be good. Instead, I left thinking they built a beautiful restaurant and forgot the most important part food worth eating!!!!
