This place was, to say the least, unforgettable. I grew up in Bellingham but have never lived there as an adult. I visited Redlight on my dad's 62nd birthday. Not only were the cocktails delicious and intriguing, the food delectable, and the atmosphere spectacular. The service was beyond words. Anna was a wonderful server as well as a different server who helped when I asked for something, but additionally I spoke to a bartender who provided great recommendations for my father. When the food and drinks were served, my expectations were exceeded. In addition to all of the positive experiences, once we had closed out a customized birthday card signed by the entire staff was delivered to my dad. We had a really good experience at Redlight and I'm already looking forward to going back and trying more of the menu! First, the cocktail menu is fantastic. It's been a long time since I've seen one this creative and extensive. If I wasn't worried about falling over, I probably would have ordered one of everything . I had the Song of the Siren, which was a perfect balance of sweet and tart without being too sweet. I especially loved the hint of white balsamic vinegar. It was surprisingly strong though, so one was plenty! My husband had Le Tigre, which had guava, passionfruit, pineapple, lime and Thai chili tincture. It had just a touch of spice and a really interesting combination of flavors. We both loved our drinks. For food, we started with the ribs and then ordered the pork belly bao buns and the hot noodle dish. The ribs were cooked really well and had a wonderful crispy/fried texture, but they were very lightly seasoned. If you really want to taste the meat, you'll probably love them. For us, they could have used a little something extra. A couple of fun dipping sauces, maybe something like a honey gochujang, would have made them amazing. Our waitress, who was extremely friendly, told us the hot noodles are one of their favorites. They weren't quite for us. There was definitely lots of flavor, but the sauce was pretty rich and dense and the dish had a good amount of spice. We each had about a bite and ended up packing the rest to take home. It sounds like it's a popular dish though, so I think this one is probably just personal preference. The absolute highlight was the pork belly bao buns. I was a little worried pork belly might mean a lot of heavy fat, but these were much more meat-forward, with the perfect crispness around the outside. The flavors were phenomenal and the bao itself was perfectly cooked. Definitely order these! Overall, really good food, wonderful service and one of the most interesting cocktail menus I've seen in a long time. We'll definitely be back. read more

Ugh, I'm struggling to give a 3 star.. I sat at the bar and our bartender was attentive and great . I've heard great things about the cocktails at Redlight but I chose to just get a soda water with lime... delicious as always ! I ordered the chilled sweet and sour potato and was very disappointed. $17 for what I got was insane. It was just a few slivers of potato and carrot on top of cold vermicelli. I loved the decor and atmosphere, but it was a very underwhelming experience for me. I'll definitely give it another try and give something else a try. Came here for dinner on a Saturday night around 5pm. The place was packed. Had about 15 minute wait for a table. Not a huge spot to wait inside so felt a little crammed while waiting for our table. The vibe of the restaurant is very cool. It is loud so brace yourself for that. The food options in addition to cocktails were great. Had the hot noodle with pork belly and my husband had the crab fried rice. Saw the pork bao which looked bomb! Kind of regret not order that. Fun, lively place with great food. We showed up at 5 on a Sunday and the place was already almost full - we were seated at the bar and then moved to a table. Both seating options were nice and allowed us to be around people while still being able to hear our dining companions. Extensive cocktail menu of well crafted and interesting cocktails. A mocktail menu of equally well crafted cocktails is also available upon request. We tried a variety of flavorful dishes. The hot noodles are particularly delicious - a comfort food like dish that is spicy and satisfying and plentiful. The crispy salt and pepper tofu is also delicious - a satisfying crunch and a soft inside. It was a great New Year's Eve dinner here! It was a packed house tonight but we decided to brave the crowds and wait 45 min for our table (we were actually quoted 1.5 hr so that was a nice surprise.) Highlights to me were the fresh snap pea crunch and hot noodles. They use their special chili oil which is so flavorful and delicious! 1. Fresh snap pea crunch 5/5 - delicious light salad with pieces of snap peas and water chestnuts mixed with a sesame dressing and chili oil 2. Crispy eggplant bao 4.5/5 - I loved how fluffy the bao was but the eggplant inside was a tad salty. I liked the crispy texture and cilantro/pickled radish they add 3. Hot noodles 5/5 - The wheat noodles are so delicious in the chili oil sauce. We opted for adding the pork belly which was a nice crispy and savory addition. The sauces were all amazing and all cooked to perfection. The rice chips, freshly made, were so surprisingly good. Chose this spot as it said it was open until 2am... it isn't. It is open (at least on the Saturday we attended) until 12am. Just be aware of that before going. The place was packed and thus there were no tables left, so we sat at the front window bar area, which was cozy and just fine for us. The atmosphere is quite nice and very intimate. I could see it being romantic if it weren't so packed. Our cocktails were all delicious. They had so many enticing options, it was honestly very hard to choose. The food was good as well, which was like an asian fusion vibe. Like, we got the cold potato noodles which had chili oil and were very dan dan noodle-esque. The crispy tofu was AMAZING. Holly was our drinkmaster extraordinaire, and Catie was our divine inspiration and helpmate, making fabulous suggestions for us. We enjoyed the frisee salad with wonderful lightly picked peach, crispy eggplant bao, the fabulous pork and shrimp dumplings (complete with lacy edges), and the complex-flavored amazing sweet potato noodles. The creamy panna cotta was a perfect finish to the pickled, savory flavor of the noodles. I had two mocktails of Holly's invention, the Black Mirror being the most amazing mocktail I've ever had. OK I'll cut to the chase here - two words: PORK BELLY! Seriously, the pork belly here is to DIE for! It is perfectly seared into a crispy shell on the outside, and super tender on the inside. The combination with the noodles were just incredible. Honestly I would eat an entire vat of just the pork belly if I could. The chili oil dumplings were decent - not the best I've had but they were still good. Drinks were amazing and creative, especially the earl grey infused one. Went on to 3 different orders of their wontons which were amazing with deep flavors and just the right amount. The drinks are inventive and very very tasty. The had a tasty Elk Street Lager on tap and their take on a Penicillin is called The Amnesiac. This is now my favorite drink I have ever had.
