Raclette refers both to the cheese and the dish. The name comes from the French racler, meaning "to scrape," describing how the melted cheese is served. Our traditional raclette had a wedge of cheese that was heated on a special tabletop electric raclette machine. It was served with bowls filled with boiled red potatoes, cornichons, tiny, pickled pearl onions, steamed veggies, cubes of bread and sliced fruits.
