Chicken Caesar salad. Really good.

On a road trip, I stopped in town (Eagle, CO) spontaneously and at last second, and found a room at the Best Western, that also recommended Fiesta Jalisco to me when I asked them where should I go for a drink and dinner. Well, I'm sure glad they did. This place is a small, unassuming, casual dining space that is decorated in traditional Mexican restaurant style. They have a full bar and a great menu con comida Mexicano. My "Mexican Chicken Caesar Salad" was OUTSTANDING. I believe the owner was cooking; patrons can look into the kitchen in the open view area near the bar. I believe this is a family owned/ran establishment. Everyone was friendly. The place was busy on a Tuesday nite with both locals and seasonal workers, corroborating my conclusion that this is the place to go for a great Mexican meal.

Out of the many times I have been here, tonight was by far the worst. They are a mediocre restaurant (at best), I (& other friends) have been here more than once simply because they are next door to the hotel that I stay at. Tonight I went with a group of nine. This is not the first time that I have come with a group, and I will say that they seem to be overwhelmed by groups larger than 4. One of my friends ordered French fries, and they were not cooked all the way through. He asked for some more fries and the waitress brought out another plate. I asked her if the plate was so she could put the fries on them and put them back in the fryer. She said it was; that's what the cook had told her to do. Myself and the rest of my party were all shocked. They took a solid 15 min to bring out the new fries, and it wasn't until I asked for the fries again. I'm thinking they were just hoping that we would forget. Another person in my party ordered a margarita. The first one was okay, so she ordered another one. The second one had little to no alcohol in it. She said it tasted like pure lime juice. She requested another one to be made, and the waitress said okay. But instead of being out another one, after asking about the drink when we received our check the waitress simply told her that she wasn't charged for the drink but she wasn't making another one. Completely unprofessional! Long story short: I will not be eating here again, and would not recommend this restaurant to anyone.

Ordered the Tres Campadres (?), and felt was an excellent choice. Had combination of chili Colorado, chili verde and a choice of soft/hard relleno (I went w hard). All three of these were very delicious, one can tell that the meat was slow cooked in the two chili's as they melted in the mouth. The Colorado was in my top 5% ever, the verde was very good although it isn't the style I typically gravitate towards as I'm a huge/bigger fan of New Mexican style cuisine w more hatch style green chili w lots of spice and flavors. The relleno was unique being in an eggroll like wrapping, but still very good. Great bang for buck. It was a Saturday night, 530p, and a bit slow. That doesn't bother me but the extremely slow and semi inattentive service was a bit frustrating. They were very nice but came around infrequently. It won't stop me from going back, but was surprising.

The food was fair. Husband and I split a combo fajita plate. (chicken, beef, shrimp) The shrimp had the tails still on which was weird to me for this type of dish. We were there by 6:30 but the service was slow. The margarita was average. Everything was average. The waitress said they were short a kitchen cook. We are local residents and would still come back and try it again sometime as it is better than the other 2 Mexican restaurants in Eagle.

After getting rained out of a camping trip (don't ask) we found ourselves driving past Eagle on I-70. Usually, we don't even slow down, but it was getting late and it had been a long day. We checked into a place to spend the night and asked where the best Mexican food could be found. Fiesta Jalisco was a few blocks away on the other side of the Interstate. It would be easy to drive past it; which would be very sad. Although it was Saturday night on a holiday weekend; it wasn't busy. With some trepidation we sat down and ordered. Our waiter was aloof; but answered questions with authority and soon we both had a marg and a Carne Asada in front of us. The marg was made from scratch, without a mix and was very good. The Carne Asada was excellent, well prepared and tender. Although we were hungry enough to be happy with a PBR and beef jerky; this was a random travel surprise. Prices were reasonable, service was efficient, if not friendly, and the food both tasty and generous in portion. It's nice to have another place in our road trip quiver!

Great authentic Mexican! Atmosphere was so nice, highly recommend! The steak burrito and cheese dip was in very large portions!

This location is unfortunately under new ownership. Disappointment is guaranteed. What a shame, this place used to be great.

They'll stick your tray on the counter but don't call out that it is ready so if it's busy keep your eyes open. We ordered four kinds of tacos: Carne asada (steak) - it was tender enough and well cooked but seriously lacking in flavor compared to the others that we tasted. Chicken - decent tender chicken shreds albeit a bit plain. Chicharron - small pieces of crispy pork rind that right before serving in the tacos are tossed in a spicy tomato sauce. Very good but you have to eat this one instantly when served otherwise the crispy pork rind starts to get mushy and chewy. Very delicious sauce! Pork al Pastor - Seriously the best of the four. Normally al pastor are made with the pork cooked in layers on a vertical split and served with some pineapple. Since this isn't a very busy place they don't do the volume required for having that kind of spit and they cook marinated chunks of pork on the grill. The marinade was very flavorful and strong and I would order these again the next time we are in the area and decide to eat here. One of the folks in our group had the multiple meat hamburger. It had a beef patty, some baloney like meat, a grilled piece of ham, a split hotdog, and bacon! They have lots of Hispanic and Mexican soft drinks as well as Pepsi products but very little in terms of low calorie drinks. Just Diet Pepsi and then three or four versions of flavored, unsweetened waters like Topo Chico. A very good value relative to the ski town where we are staying.

Service was excellent again. 1st visit: I've been in Colorado for nearly two weeks and this has probably been the best meal I've had so far, even after dining in Aspen (Clark's, Aspen Public House) and Boulder (Flagstaff, the Kitchen American Bistro).
