Even during peak summer season the restaurant was crowded and even had a line starting to form at peak lunch hour. There are not very many large tables so don't expect a large group to be sitting together. The menu is pretty straightforward with the typical miso, tonkotsu, and shoyu broths. But they even have a tomato broth with Hokato scallops for those more adventurous. We ordered the Tonkotsu Black $19 & the Tonkotsu+ $19. Is it pricey for Ramen? Yes. But was it worth it? Yes. The Tonkotsu Black had a rich broth with prominent garlic oil. The Tonkotsu+ was really the show stopper. With 3 different styles of meat: Smoked pork pastrami, meatballs & chashu. The truffle oil was fragrant and earthy. But the biggest surprise was shiitake mushrooms. They were marinated/seasoned to perfection, with a hint of sweetness. I would've been happy with just a giant bowl of shiitake mushrooms, and truffle oil. The broth was much lighter and delicate than the Tonkotsu Black, yet strong on the truffle. If you're not really a fan of truffle, do not get this. We were tempted to go back again, but we opted to try other restaurants around the downtown area. 10/10 Would go back again! The staff are very friendly and quick. Give it a try! They have multiple locations, especially if you're looking for something new, yet comforting.

The wait staff were nice and quickly sat us when we arrived. There were many different types of ramen to choose from and we both got different ones. This let us try 2 different versions. One was spicy and flavorful, while the other was mild but still flavorful. Both of them were quite tasty and we were in and out in a pretty short amount of time.

Combos come with your choice of meat, your choice of rice or vermicelli, salad, a spring roll and an appetizer vegetable soup. I got the chicken combo with vermicelli ($18) while my husband got the beef combo with rice ($19). The vegetable soup was mostly broth and only contained a single broccoli floret, a single cauliflower floret and a single slice of carrot. Oh and some green onions, lol. However, the broth was very flavourful. We each got 3 sizeable pieces of meat. Mine where chicken thighs. I do prefer lean breast meat to the fattier thigh meat, but they did trim off the fat, so the meat at least wasn't gristley. The marinade was delicious. The chicken was really flavourful. I had a taste of my husband's beef and it was tender and delicious. I did notice some gristley bits to the beef though. The vermicelli was nicely cooked. The spring roll was hot right out of the fryer and crunchy on the outside. The salad had too many raw bean sprouts for my liking. It also has lettuce, pickled carrots, and daikon. And also mint leaves. We both enjoyed our meal. Service was pleasant. The place was packed when we arrived, but by the time we left it had completely cleared out. Decor is modern and hip looking, lol. Clientele seemed to skew young, at least younger than my husband and I, haha. The restaurant is in a plaza and there's free parking in the plaza parking lot. The family running the restaurant is very sweet, and the service is fantastic. We split some potstickers (the fried ones are super crisp and everything comes out piping hot) and ramen. The real issue was the heaps of frozen vegetables on top - carrots, cauliflower, broccoli and corn. Definitely, obviously from a standard frozen bag. Watery and just out of place in a ramen. Additionally, I have to say the bathroom wasn't clean. There was pink mold around the taps and paper on the floor. I wish this family everything good, and I know they are working super hard running two restaurants, I hesitate to post anything negative but really hope the feedback can be useful and help them succeed bigger and better.

Each signature bowl always starts in the wok, where they fire up minced pork, garlic and bean sprouts. Added is an assertive blend of red & white miso, sake and other seasonings. Piping hot broth is then poured over a fresh bed of noodles which melds all the flavours perfectly together to give it that unique Isshin smoky taste with veggies to provide that crunch and sweetness to balance it all. A whopping choice of over 15 different types of ramen, as well as seasonal ramens, flavourful vegetarian and vegan options are available.
