I was curious about this spot mostly because it confused me. After eating there, it still confuses me. I got the empierogis (what a cute portmanteau). I thought it would be like a pierogi with Colombian spiced filling. After waiting for some time, I got a plate of pierogis topped with braised beef. What I got what very meaty and good, but not all what I was expecting. The portion was ample and the pierogis themselves were quite good. I don't love huge portions of just meat, but for someone who does, this spot delivers in spades. I don't know what I was expecting from polish Columbian fusion. I was more curious than anything of how the mismash of these different countries would taste. I got the emperogis - empanada perogies. They were good. It was more like a perogie than an empanada (basically it had a bit crispier shell and had some beef in the filling), but still worth it. Go again? This place has been on my list for the last few months and I'm beyond excited that I finally got to try polish-Colombian fusion! Ordered La Zapiekanka which was a great twist on a classic Polish street food. I haven't had one of these since I last visited Krakow and it brought me happiness and nostalgia. Polombia is one of the fine outlets at Time Out Market on Fulton Market. The foods are sort of a fusion mashup between Polish and Colombian cuisine, as the proprietors are representative of those two countries. You get a buzzer that will tell you when your food is ready. They do take a few minutes to prepare the food, so you know it's all made fresh for you. Still, I stared impatiently at that buzzer, waiting for it to light up... My love and I tried a couple of their dishes. We enjoyed the Kielbasa Perro, a gourmet Polish sausage topped with pickle slices and stacked atop a toasty roll. The Arepa-Ski consists of two arepas, and you can get different toppings if you wish. I liked the roasted chicken better than the short rib, which was a surprise to me as usually I love short rib. Time Out Market is a pretty cool spot in a cool part of town. I loved the vibe walking in and found Polombia immediately as my first stop here. The guy working the counter was extremely nice and patiently answered all our questions. I've never had Polish Colombian fusion cuisine before, so was pretty sold on getting something from here. We ended up getting the arepa-ski and sal-chi-papa. Aprepa-ski: Like a few others noted here, I think this is a pass. Nice concept, but I'm not a huge fan of the polenta texture for the base, and the chicken was kind of forgettable in terms of flavor. Sal-chi-papa: Definitely worth trying and what makes this place a 4-star. This was the recommendation and I'm glad I got it. It's really flavorful and the seasoning is on point. I've had this place under my radar since I moved to Chicago in late 2020 when they were still located in a different food hall (but everything was shut down due to COVID). Fortunately, I finally got the chance to try this last night at the TimeOut Market (which is really a cool place to be at in general). The entire place was packed, and finding seating was a bit difficult, but we decided to take our food up to the third floor and sit out on the outdoor patio. I will say, it did take a while for my food to come out, but I'm assuming they must've had a lot of orders in front of me. Anyways, the Kielbasa Perro was bomb, and by no means did it feel authentically Colombian to me, but we all knew this going in as it is a fusion restaurant, and that is perfectly ok. I did appreciate that this meal came with some sprinkled broken potato chips on top which is typical of a Colombian hot dog. I also ordered this vegetarian item that has lentils in it. It was ok, but I'd definitely like to try some of their other items like the emparogi. The Polish sausage is deeply savory and juicy with its smokiness's very evident. You need the pickles to offset it. This is gourmet dogs. I stopped by their stand at Time Out Market and couldn't resist giving their short rib emparogis (empanada-pierogi fusion) a try. Delicious!!! An order came with five fairly good-sized emparogis, lightly seared and stuffed with short rib and sweet potatoes. The sweet potatoes were a delightful surprise, and together with the beef and seasoning lent a nice sweet-savory touch to the dish. Although the emparogis are listed under mains, they were more suitable for a light dinner. If you're hungry, I'd recommend adding a side to fill out the meal. Shout out for friendly service here, too. Not only from the guy who took my order and cooked it, but also from the nice woman who answered when I called ahead to check on their hours. Based on the other reviews, it seems like the consensus is that the arepa-ski is not the most impressive item on the menu. I can confirm that my vegetarian arepa-ski (with lentils rather than chicken) was nothing to write home about. There were several elements to the meal that I particularly enjoyed, such as the dense and slightly crispy arepa as well as the zippy aji sauce. However, I found the meal to be lacking cohesiveness: the arepas were slathered in honey and ricotta, which made the dish overpoweringly sweet even upon adding the lentils and pickled slaw (both of which were pleasant, but not strong enough to offset the ricotta/honey combo). Rather than combining all of the ingredients for the 2nd arepa, I decided to mix the lentils and aji together to make a stew and then eat the 2nd ricotta/honey arepa as a pseudo-dessert. This was far more enjoyable than adding all of the elements of the dish together, although it was not quite what I was looking for. Overall, I was not overly impressed with Polombia. The presentation of my food was excellent, and the price was actually quite reasonable for the amount of food I received. However, the ricotta and honey brought this meal into "breakfast/brunch" territory, and the other ingredients were not great complements. I would've given Polombia 3.5 stars, but decided to give 4 given that other people seem to agree that this dish is the weakest on the menu. I chose Polombia for my lunch when we visited Time Out Market. I was super intrigued by the combination of cuisines/heritages (Polish + Colombian) and couldn't pass up a chance to try something so unique. I was sitting up on the rooftop with some friends and was able to order and pay on my phone after scanning a QR code and selecting Polombia as my restaurant/stall of choice. The process was easy and very straightforward and I received a message stating when my food would be ready. I headed down at the stated time and on my way I got an extra text message telling me my food was ready and to come get it. Yay for thoroughness and punctuality! The friendly employee at the register asked my name and had my food waiting for me. Easy as pie (although climbing back up a couple stories with a heaping tray of food was a little less easy, haha). I ordered the arepa-ski with roasted chicken and a side of potatoes. This was my first time trying an arepa and I enjoyed it. It reminds me a bit of sopes, but the cornmeal patty is a touch airier. The honey ricotta added a subtle sweetness and the chicken was tender. Texturally, it was a very fun dish, and beautifully plated, too. I thought it tasted good, but I will say I thought the flavors weren't quite as punchy/bold as I was really expecting. Not sure I tasted the aji sauce at all, but maybe they used a light hand. The potato side was delightfully buttery and salty, so all delicious there. My friend got a "la zapiekanka." I didn't get a chance to try a bite, but she said it was really good. Talk about living the dream! A polish husband and Colombian wife have crafted a surprisingly delicious fusion menu with dishes that you haven't seen anywhere else. We stopped at Time Out Market in the middle of a rainstorm, looking for a beer and some snacks while we waited out the storm. Nothing made us happier than to find a full-stacked craft beer bar with tons of restaurant stands. Among all the choices, Polombia was intriguing because of their unique menu with items like arepa-skis, emparogis and the kielbasa perro. They also had traditional Colombian and Polish sodas, which were a nice add. We ordered the sal-chi-papa, which is their take on kielbasa and potatoes with sauerkraut and scallions, and a special mix of fresh-made sauces. This dish was finger-licking-good. The Arepa-skis also caught our eye because of their cute name. We only tried the Coffee-Braised Short Rib and Mojo Roasted Chicken, but we'll be back to try the Smoked Kielbasa & Vegetarian Lentils.
