The loaded pho soup was excellent, very tasty broth. The summer rolls were also excellent with a great peanut sauce. The bbq ribs were tasty but the meat was tough. We were all looking for a good pho place nearby our hotel and this place showed up on my google maps. There was duct tape all over one side of the door so of course that made us think of our safety of the area and location. Once you walk in, it's not so bad. It wasn't busy when we got there so we were seated right away. They have a lot of options but we all went to what we were familiar with. Got the spicy pho because it looked interesting. Maybe because I didn't indicate the spice level, but the spicy pho was pho that was red. I did not get any spice at all. Our group of three visited Pho Eva on a Friday, with no wait. Pho Eva has a small parking lot, but pretty ample seating. Service was kind and quick. I ordered the summer rolls with peanut sauce, as well as the Grilled Pork and Shrimp Vermicelli. Portions are pretty large, especially on the pho! An XL bowl looks impossible to finish. I'm not sure if it is because I came an hour before closing time... It tasted watered-down. I love pho for the amazing broth, which is typically salty, and this kind of disappointed me. I hope I had an off batch?. The good thing is that the portion was big- lots of noodles! They gave vegetables, and it was a fair amount. I find that typical mom and pop Vietnamese places are pretty stingy with their vegetables, but they were not! I might go back to try it again. Will update review if so.
