We aren't sure if all the annoying hipsters of Denver relocated to Carbondale or just this restaurant. We're staying in Snowmass- as we always do and decided to drive down to Carbondale for the evening. We should've just went to Aspen, people are actually more friendly there. We wanted a table for 2 a bit after 6pm. we were told we'd need to wait at least 45 minutes even though the place was empty, ultimately we opted for the bar. We felt like we were not part of the club- and barely able to grab a bar seat. That's a strange feeling for Memorial Day weekend. We won't be back- just on principle of the service the host gave, but the food is good, and our bartender was top notch. read more

LOVE the food here I love the Coconut rice - it goes with any of their main entrees. The entrees are perfect for sharing with one other person so unless you like leftovers then be sure to get a couple appetizers and then one entree. Service is usually a little slow so be patient and don't go if you have someplace to be afterward. read more

For being such a small town, Carbondale surprisingly has a real variety of great restaurants and Phat Thai certainly falls in that category. The food was unique, delicious, and set itself apart from other Thai restaurants I've visited. The rice cakes that come complementary to your table seem to be their signature (not to mention addictive as hell). I devoured those babies in a flash after a good fish sauce dousing. The cocktails are pricey, but yummy. And don't worry, they aren't shy with the booze. We came on a Saturday night and the place was packed and had to wait a bit, so reservations couldn't hurt. Service was a bit slow and the only thing holding back that 5th star for me. (There seemed to be a new girl though and I know all too well the pain of being in that position, so I felt forgiving.) Cool, Hip place. Asian fusion is my thang! Don't be put off by the fish sauce funky smell. That's how you know it's gonna be good. Everyone liked the firecracker shrimp and the XO edamame was perfect. The pork steam buns were awesome! 2 of us had the green curry and one had the phat Thai. Both dishes were good. I had the Tom Kha Kia which is their version of Tom Kha Gia. Yummy. Also, I had another starter for my meal. The short rib tacos, which were more like nachos, but great. I really liked the house made kimchee on the tacos and the mint pesto was a pleasant surprise. The two winners of the evening were the fried chicken and the spicy duck w/ coconut rice. Been here multiple times and have had a great experience each time. Seems to be that same great servers that know the menu well. The cocktails are unique and delicious, as are the appetizers and entrees. Sort of a fusion restaurant with their different take on Thai food but I enjoy it. The food was over-rated. We had the Thai Fried chicken (terrible flavor, not very much food) and the Phat Thai (was the worst pad-thai I've ever had). In addition the Tom Kha soups were awful. Worst of all, we think we got food poisoning. Would Not Recommend. read more

Horrible service. I came in with my elderly parents, who also have a house here. And the manager would not let them sit at a table. He said the tables in the back were "reserved" for people who made resos or were hot from the outside patio. My dad, who has bad knees, and my mom a bad back were so uncomfortable. The whole time we were there, NO ONE sat at those tables! My husband and I went on our first date here years ago. So Phat Thai we used to LOVE! Food, service, and horrible manager will prevent us from EVER going back. This place is going downhill FAST! That is the word around the Roaring Fork Valley... I saw it for myself! Phat Thai's website says this isn't traditional Thai, it's different. Well different is incredible! We visited Phat Thai for the first time last year when we were skiing in Aspen, and we loved it so much, we knew we had to return during this year's trip. My words can't do this place justice, so I'm just going to name the goodies we had and hope that there is justice in the world and you'll get to try them at some point: Roasted Brussels sprouts Spicy jungle curry with crisp tofu Massaman lamb Mama Phat Phat Thai with Shrimp and Tofu Bar drinks are pretty fantastic, too. May be this was not my cup of tea or may be they just didn't do things right. The papaya salad was tasteless. It's not like they gave me salad dressing to pour on, the salad and the dish was completely tasteless. I ordered the chicken lettuce wrap and it felt like I was eating candy. The chicken was completely coated with sugar and the lettuce wasn't even crunchy. Then came a bowl of curry. It had a totally of 4 small pieces of meat and they charged me $17 for it. It didn't even come with rice. When the server came and took the order, I asked her a couple questions and she was so annoyed!! If you are not a Thai restaurant, then don't name your food Thai names, that's a complete disgrace to traditional Thai dishes, name them whatever fusion names you came up with and quit lying. read more

Creative Thai with a foodie twist. We recently took some friends here from out of town and everyone raved about it all night. The sweet crab/ corn fritters and crisp pork with watermelon and mint are perfect starters. Our awesome waitress accidentally put in an extra order of the fritters but let us keep it and even took it off our bill (score!) I ordered the Laksa with shrimp and had leftovers for lunch the next day- Perfect lemongrass curry. Husband got the Thai fried chicken with kimchi, which I had bites of. Make sure to try it- even when it sounds silly to order fried chicken in a Thai restaurant (our waitress highly recommended it). The drinks all have a unique twist and I could have sat all night drinking their spicy thai jalapeno margs. Perfect place for a first date, a groups, families, couples etc. Don't bring a picky eater here. Oh, and those rice wafers they bring out to snack on? I'd go back just for those alone. read more

I definitely crave phat thai! It is one of the first places I ask my family to go to when I am visiting in town. You must get the edamame with the XO sauce --- why isn't that sauce available at all thai places - it is sooooooooo good. It has a very young / trendy / modern feel to it - but don't feel obligated to dress up -it's still a mountain town. The food is the best - a lot of the entrees have a ton of heat - but that's what makes it sooooooo good. Carbondale has a lot of great places to eat (Russetts, Six89, White house pizza) but Phat Thai is my favorite. read more

You've got to try the Mama Phat noodle bowl. It's absolutely incredible and I can't believe it's gluten free! So much flavor! The restaurant itself is really nice. I was in there on a Friday night and it was really busy. Pretty loud and you don't get much room to yourself so it's an ideal place to go with a group. Great Southeast Asian food in Carbondale! We ordered wayyyy too much food but leftovers tasted just as delicious at 4am, fourth meal time! The papaya salad was almost too spicy to enjoy. The laksa was fresh tasting and full of flavor but the lamb masamam curry was the best Iv had! I have tried this place several times and, unfortunately, I have never been impressed with the food. It's a nice looking place, nice atmosphere and the service is fine, however, the food is just not very good. I ordered the "Waterfall Beef" described as: "chiles, lime, mint, roasted rice powder, sticky rice, fresh asian veggies." What that actually is: a small grilled sirloin with raw vegetables (think crudite) and a ramekin of dipping sauce. Huh? The curries are boring and regular too. read more

I visited Phat Thai a couple of years ago pretty frequently and was amazed at how very good the food was. Interesting combinations and great cocktails. However, I'm not sure what has changed but when eating here during Mountain Fair this summer the experience was very different. Our server sat down next to my girlfriend to take our order and when we received our food (the Massaman Curry and I think the Chicken Curry) they were both quite bland and tasteless. I had five or six bites and couldn't do any more. We called it a day and went down to Russets and got some of their phenomenal lobster bisque. read more

Who woulda thunk that Thai food would be so good deep in the Colorado mountains? I could eat a thousand of their pork steam buns (appetizer). We ate there twice during our stay and the staff worked hard to squeeze in our group of six on a busy Saturday night. I had the laksa with shrimp -- really fresh and spicy enough. All the dishes were happily enjoyed but those buns...still savoring them in my mind. The decor is cool and current. These people who also own Town across the street really know what they are doing. Phat Thai is my favorite restaurant in the whole entire world. It is one of my "happy places." I've eaten there many times over several years (I go every time I'm in Carbondale, except that one time I was there on a Sunday and they were closed and I experienced a great deal of first-world-problem sadness and disappointment) and it has always been delightful, every time. I'll admit I haven't tried everything on the menu because I pretty much always order the same things: XO edamame, fresh spring rolls with tofu, coconut rice and green curry with veggies. But I've sampled a few other dishes and they were also great. They have fun drinks too. It's a very nice environment. I've always had awesome service.
