After drooling over the menu at Phat Thai while enjoying a cocktail down the street, my friends and I knew we had to go there for dinner. Unfortunately, for us, the restaurant was fully booked until 830 or 9pm. The hostess found a way to squeeze 3 of us in a table for 2 and we couldn't have been happier. Our server was prompt and friendly. She helped us narrow down some dinner choices. Two of us ordered the Thai fried chicken, after recommendation, and the third ordered a soup with shrimp. We split a cashew brownie with banana ice cream at the end. From start to finish, the meal was amazing. Every single piece was packed with flavor. The chicken was crispy, the sauce was spicy but not too spicy. The rice on the side was coconuty, creamy, and dreamy. The document slaw had a nice vinegar-y bite to complement the rest of the plate. My friend said the laksa with shrimp was the best she's ever had. The brownie was warm and crisp on the outside, but gooey in the middle. All around great experience. Spring rolls were veggie heavy and would have benefitted from a peanut sauce, but otherwise fresh and tasty. The Phat Thai was rich and flavorful. Went here after a long day of snowboarding and driving all the way from Denver before checking in to our hotel. We were so excited to find a Thai Restaurant in the area we were staying in, but I guess this place has a lot of rooms for improvements. It was very generous of them to have crispy chips as a complimentary, and it comes with 2 different sauces too. We ordered bunch of different stuff, we love Thai food ! We ordered laksa, penang curry, Fried chicken, the lamb curry, Thai tea and birch beer. The lamb curry lacks of flavor and I think it's too watery for a curry.. I love my laksa, it's our fave on the table. Penang curry is ok. They can improve the flavor with more spices and flavor I think.. It's a great location and easy parking too! read more

We found ourselves in Carbondale with Thai food on the brain--lucky for us, Phat Thai was ready with outdoor seating, superb service, and innovative takes on Thai and other Asian recipes. Our group was stoked to be seated with hardly a wait. Everyone started out with Thai Tea. I don't think I've ever had this and not liked it, but.. Their version was vibrant enough to consider another. Had I booze on the brain, they feature a decent selection of CO brews, wines, sake, and a full bar. I usually gauge a new Thai joint by trying first the Massaman curry. Here, they favor this dish with lamb. You'll hear no arguments here. Strident flavor notes from both meat and spice had my attention from the first to last bite. The twist? Sweet potatoes swimming in my bowl instead of the usual spuds. Approved. Thumbs up for the Phat Sie Ew, as well. Its noodles were perfect, the protein substantial and tasty. Bonus? Someone ordered the Thai fried chicken. You should, too. Overall, as long as you can deal with a Thai place that allows kimchi on the premises, this place deserves a visit. read more

Phat Thai provided the best meal we have had in Glenwood or Carbondale during many visits here. Don't overlook the green curry. It was delicious. I don't know how better to describe it. Lots of chicken and the eggplant was perfectly cooked. We enjoyed the spiciness and the deep flavor. We also tried the kimchi and the slaw. The slaw was bright and fresh. Neither were dripping in dressing; they were well crafted and great food. The spicy basil chicken was excellent, too. It was sweeter than I care for, but it also had deep, rich flavors and was good eats. The environment is inviting, clean, vibrant. The waitstaff were pleasant and attentive. We will return and if you're looking for a nice good dinner, you won't go wrong here! read more

Okay so they claim they are not a Thai restaurant nor an asian restaurant even but come on it is. Every dish is a their rendition of classic southeast Asian dishes. I got the red duck curry. The duck was super tender and quite a large serving. A lot of front range Asian cuisine gives minimal amounts of meat especially pho restaurants. The curry was delicious but I do wish they could turn up some heat on it. Unlike most Asian restaurants they did not ask if I wanted a certain level of spice. The momma Phat though was one of the best noodle dishes I've ever had. Sweet and savory. I can see if you don't have a sweet tooth that you might not like it but to me and my wife it was amazing. A lot of complaints about the price. You are in roaring forks valley aka Aspen valley. Look at the A list celebrities and Uber wealthy around. You are going to pay more here. So get over it Texas. Honestly, the prices were not over priced especially for the quality, size and atmosphere. If you want overpriced mediocre food then come to Boulder and I'll show you some epically mediocre food for higher prices than here in the Valley. And finally my last rant. It's incredible how many stuck up, snobby coasters that come here and say it's not real Thai food because spent 3 months back packing in Thailand on their daddy's credit card. Who cares. I moved to Cdale from San Francisco four years ago as a transfer student to CRMS (local boarding school), and Phat was the first restaurant I got to eat in when I first moved here. Over the course of the 3 years I stayed in Cdale, Phat remained my favorite eatery. Their food is delicious-- I'm vegetarian and lactose free and have never had complaints about the flexibility of their menu. The service is amazing-- in my last year living in the valley a friend and I began a tradition of eating there at least once a month. The staff was always happy to see us and extremely kind. They would give us extra sesame rice crackers and free dessert on our birthdays. They never judged us for ordering three Thai iced teas in a row. Their service is prompt. It was always the perfect place to bring my family when they visited. The vibes are immaculate. Their coconut rice is legendary. Their tofu pad thai is delectable. The edamame, perfection. The spring rolls, refreshing and beautiful. The Thai iced tea, decadent. I haven't been able to visit Phat Thai in over a year now (college be that way), and I don't even exaggerate when I say I think about them all the time (Thai fusion in Vermont just isn't the same). Phat Thai holds a special place in my heart. I must have dined there a hundred times at this point, and never once did I have a complaint. They are worth it all and more. If you live in the Valley, please consider ordering takeout from them during this quarantined time so that they stay in business-- they are a staple in this tiny town. I'm agnostic but Phat Thai is god's greatest gift to mankind. This part is most important for those who have never visited: Anybody who gives Phat a bad review was probably very rude or impatient with the lovely staff-- we always called ahead, always asked politely if we wanted to be reseated or preferred our food less spicy, and were met with equal (if not GREATER) hospitality. read more

I used to live in the area then moved to Vail. I miss this restaurant but eat here many times when I'm in town or passing by. I've tried a decent amount of their offerings and can tell you hands down their best dishes are.  Food quality is great and portions are decent for the price. But yes it's not your typical Thai restaurant but the concept is phenomenal. The menu is thoughtfully created.  The inside takes me back to restaurant/lounges in DC. The owner is usually around and you can tell he has taste and class. Nice welcoming guy. Plates - BBQ slow roasted Berkshire pork - I consider this their flagship dish.  Get it with their kim-chi slaw and coconut rice. The rice adds a transitional sweetness that compliments the glaze on the pork. I love this dish. Curries - Hands down the Red Duck Curry beats out all of their other curries. I end up adding extra chili salt and sugar sometimes for my personal taste but it's dam good. I'd say this is their second flagship dish. This is an original dish and you will never find anything like it anywhere else.  The green curry on the other hand is forgettable and would recommend skipping it. RED DUCK CURRY IS WHAT YOU NEED TO CHOOSE.  The short rib ramen is actually pretty good especially on a cold day. I would like to try their Laksa next time.   I'm skeptical about their stir fried noodle dishes so have never tried them. I'd be surprised if they have well seasoned wok to flavor and caramelize the noodles at high heat. We drive from KC to eat here every other month. Tigerita is the best drink ever. Phat Thai can not be replaced. It's the best food best people best atmosphere. (1) knock was during COVID a waiter actually had the balls to tell me when I'm not eating or drinking my mask needs to be on. I stated nobody was around then he had a older women who I presume was a manager tell me to do the same. I honestly love the food but come on people don't let MSM control common since. Met someone up here for dinner and it could not have been better. This is a hidden gem in Carbondale that you need to go to. I got the fried chicken with their signature coconut rice and it blew my mind. It was sweet spicy but it didn't make me feel super full and gross. Instead the rice was so Luscious and sweet I couldn't believe the flavoring from it and the the chicken I couldn't believe how crispy it still was with the sauce all over it. I couldn't decide on what to get and he pointed me to a super tasty kaeng kiew wan dish with awesome coconut rice. The appetizers and Mai Thai were also amazing! We left super happy and full. This trip is our first time in the town of Carbondale. Discovering Phat Thai has been a wonderful dining find. They have a great menu with many choices for our vegetarian family. Every delicious dish we had was full of flavor and spiced perfectly. Matt was a personable and friendly waitperson, as was the entire staff. In these challenging times, they made our dinner outing enjoyable, safe and stress-free. The outside patio was a perfect setting. We will for sure be back for future visits. read more

Server was a sweetheart (under 21, her admission, but attentive, happy). We ordered several dishes but the standouts were the appetizers - chicken satay and chicken sliders. We had the red duck curry (noodles and sort of one note); the waterfall beef (nephew inhaled the beef, not as keen on the raw veg but he is a teenager); we did a side of kabocha squash which was enjoyed by all; the chicken and broccoli; a side of noodles, jasmine and brown rice, laksa with shrimp as well. My brother-in-law had beer, sister a 'can-Thai-rito' (strong for her) and I had an Albariño. We were stuffed. I've lived in the Roaring Fork Valley for 7 years. I have never eaten a bad meal at Phat Thai until last night. I ordered one of my favorite entrees, Spicy Chicken Basil. Typically the chicken is pounded thin and deliciously tender. Last night it was cubed, tough and flavorless. The broccoli in the dish tasted like it was steamed in the microwave. No spice whatsoever. We were staying near Glenwood and our host recommended Phat Thai. We got to the restaurant only about 45 minutes before closing but we were never made to feel rushed, which we totally appreciated. The complimentary crisps were tasty and I totally used the sauces to doctor up my entree. We were warned the chicken lettuce wraps would be spicy, and they were, deliciously so. My laksa with shrimp and side of rice was exactly what I wanted. My husband was making obscene sounds while eating the fried chicken Thai style. Saucy but still crispy skin? Amazing! Of course we should have been cautious since this place is located in the area with 0 to none Thai people. Weird snobby patrons who were seated nearby and started shouting in rage to each other about their housemaids and how they don't deserve their $13.00 hourly wages and it kind of makes sense who are raving about this restaurant. We got there hungry and excited for its good reviews and titles. Huge disappointment and the dishes were only tolerable because the waitress gave us a side of Thai chili. Suppose to be a family size generous portion per her words but they were small servings which was ok otherwise there would have been a lot of leftover that we would have left behind.
