This is probably my favorite jianbing I've tried so far. I appreciate how many different types of fillings they have. They have a couple vegetarian options which is great! I ordered the fried tofu classic series, which was the first time I've ever had a fried tofu inside a jianbing. The outer layer was more crepe than egg, in comparison to other jianbing I've tried before. But I didn't mind it (and actually enjoyed!). The sauce inside is so flavorful and delicious! The classic was a perfect portion for me, but they also have signature and loaded options if you're really hungry. They also welcome personalizations, as they were willing to accomodate my request of no cilantro and zhacai (Chinese pickled mustard plant stem). The mild spice was perfect and really not spicy at all - I would probably try medium next time. While food trucks can be hit or miss sometimes, this one did not disappoint. The wait for the food was a little long, but it was worth the wait because the food was delicious. The prices are also decent for a food truck. I highly recommend trying this!

For only $14, the beef noodle soup is quite reasonably priced, and actually a full meal. I've had an experience with a food cart in the past where the portion size did not reflect the price point, but not here. The beef noodle soup here is on par at what you'd get at a sit-down restaurant. It's packed with tender beef, plenty of noodles, veggies, and a piping hot broth. Chili oil was unnecessary, as it already came with some on top. The broth itself was clear, yet still had the correct spices that beef noodle soup is known for. This food cart was pretty popular. Other patrons were ordering some of the dry noodle dishes such as the noodle salad or dan dan noodles. Everything from their kitchen looked so good, but as a soup kinda gal, I'm glad I ultimately went with the beef noodle soup. While I cannot speak for the flavor profiles of the other dishes Stretch the Noodle has to offer, from my experience enjoying the beef noodle soup, it's safe to say that I was very happy with my lunch and would love to return to this food cart the next time we visit PDX. It's only been a week since I went to the cart and I've been craving it again ever since. I didn't even take a picture of my meal, I just dove in. The smell was just too tantalizing. My only complaint is that the hours make it difficult to get over there, but if I plan it right I can make it work and the food is well worth the effort.

The chicken and beef was okayed. Hummus and tzatziki serving was large. I wish I had more pita bread so I didn't have to waste the dipping. There was a good amount of rice under the meat. The plate was good overall but there was not enough sauce drizzled on the top. As a result, everything seemed dry.

As a Jamaican who grew up in the Miami neighborhood known as "Little Haiti," I have had ample exposure to Haitian cuisine, particularly griot. My childhood memories include saving my allowance to purchase griot from a Haitian lady's house on Fridays, with the assistance of a neighbor who spoke her language. My first taste of griot occurred when I was 11 years old. I felt compelled to share this background information to establish my credentials in assessing the quality of Haitian cuisine. Tap Tap Cuisine proved to be an exceptional gem in this regard. Plus, my 2 friends who accompanied me are of Haitian background. We all gave it a 10 out of 10! In all areas.
