Not my favorite bagel I have had in the city, but I'd get it again. Got the bacon egg and cheese breakfast bagel sandwich and it was good however kinda bland. Their only "sauce" option was mayo which didn't give it any real flavor. However, the bagel itself was really nice and fluffy. My mom got the everything bagel with a cream cheese smear and that was 10x better, I definitely recommend the bagel with a smear over the sandwich. This is quite literally a hidden gem. Don't blink, or you may miss their tiny storefront/AKA pickup window. If typing it into your GPS, type "Remedy Coffee." If facing Remedy's front doors, Paysan is tucked next to their building on the right hand side. Go early before they run out of bagel flavors and walk up to the window to order (or order online). The service was fabulous and we loved all of their inclusive signage celebrating equality. The pricing was also very reasonable. We wanted a few simple bagels just to see what the Paysan hype is all about and got an Asiago and a Casio e Pepe. They were probable the best bagels we have had in Knoxville thus far. A bit more dense and non-fluffy than NY bagels but still very tasty. We are looking forward to trying a bagel sandwich sometime. read more

I rarely give a five-star review, but the bagels were so amazing, I would have given 10 stars! I ordered a Salt & Pepper bagel with hummus to eat right away and then a dozen bagels to go. The crunchy outside with the chewy inside was perfection. The Asiago bagel was probably my favorite. Parking is a little strange in that area, so you may have to search for a spot. Also, it is a walk-up window, so know that you can't go inside but it's right next to a coffee shop. I can't wait to visit Knoxville again so I can eat amazing bagels again! read more

I just paid $15 for two bagels that were at least one day old, they were both hard as bricks. I usually get a bagel here everyday for my wife and I, and they usually great, but today they only took orders online, so I had to wait 25 minutes, and once we got them home she couldn't even eat hers. I really enjoyed the smokiness of the bacon but my fiancé thought it overtook all other flavors on the sandwich. It's personal preference but bagels were delicious and overall enjoyed it. I had been wanting to try their bagels since I discovered them online a few months ago and I finally had the opportunity this week. The bagels were delicious but I was disappointed that I bought a dozen bagels and a container of cream cheese and asked if they could put cream cheese on three of the bagels for me and they wouldn't do it . They said I had to pay individually for a bagel with cream cheese which would have added another $12+ to my bill. The container of cream cheese was already an outrageous $7. Just would have been a great customer service opportunity for them to do it since they had all of the equipment right there and didn't have to mess with trying to cut a bagel with a plastic knife as I sat at my desk at work.
