    Love Paysan! Been numerous times and never disappointed. Love a good classic plain cream cheese on everything bagel. Service is decent - they're nice but sometimes slow. Ambiance is lacking, but that's not the point of this place. The point is good, quality bagels to go and they deliver on that front!

    Food is 10/10, bagel was delicious and the salmon was perfect. I went for the Classic Lox. Only improvement could be a separate window for pickup orders, gets a little chaotic when there is a line.

    This is quite literally a hidden gem. Don't blink, or you may miss their tiny storefront/AKA pickup window. If typing it into your GPS, type "Remedy Coffee." If facing Remedy's front doors, Paysan is tucked next to their building on the right hand side. Go early before they run out of bagel flavors and walk up to the window to order (or order online). The service was fabulous and we loved all of their inclusive signage celebrating equality. The pricing was also very reasonable. We wanted a few simple bagels just to see what the Paysan hype is all about and got an Asiago and a Casio e Pepe. They were probable the best bagels we have had in Knoxville thus far. A bit more dense and non-fluffy than NY bagels but still very tasty. We are looking forward to trying a bagel sandwich sometime.

    Amazing bagels!! Do get there early because they run out of select bagel choices pretty fast. They are a small company so it's understandable! We loved our experience here. Great staff and food. No indoor seating but we got coffee and ate in remedy coffee shop. It was perfect.

    Some of the best bagels in Knoxville. It's a small window next to a coffee shop but I'd highly recommend ordering ahead. Service was quick and friendly! I get the BEC on Asiago bagel.

    If you can't find a parting spot, walk! I had the flower power bagel. I'm not vegan but loved all the ingredients on it! My husband got an Asiago bagel a side of butter. Living we got it in the side, it wasn't butter. It was margarine.

    You'd miss the place if you weren't looking for it. Walk up window for ordering with two picnic tables outside for sitting but you can go next door to Remedy for coffee and more seating. They both open at 8am. I got the bacon, egg and cheese on an Asiago bagel, and added scallion cream cheese. We also got the BLT on a plain bagel. I really enjoyed the smokiness of the bacon but my fiancé thought it overtook all other flavors on the sandwich. It's personal preference but bagels were delicious and overall enjoyed it. It's worth a stop if you're driving through town!

    It was not worth the wait. It seemed like they were doing me a favor by allowing them to wait on me. There is much better in Knoxville.

    Absolutely amazing. I always ask what just came out of the oven. There's nothing like a hot bagel just out of the oven.

Haven't had pastrami in a while so I had to order the Pastrami Reuben and the presentation was great with how it was stacked! Between the sauce and the sauerkraut the flavors were all good and I enjoyed the taste of the pastrami when I found it, but the bread to meat ratio was so high I mostly tasted the burned crust of the bread and very few bites of pastrami. It was one slice of pastrami, not a thin slice but not what you hope for when you bite into true Jewish deli pastrami, which are normally bursting at the seems with meat. Marble rye is hard not to burn and they did a good job for the most part, but I tasted more crust than I did pastrami, and for $18 I wonder if this sandwich was more a charge for the hype. The blintzes were also smaller than one would expect of a blintz but I absolutely loved the compote on top.

    Oh. My. Goodness!…read more I've been following the Sovereign Sourdough Instagram and Facebook page for awhile because I love the fact that she focuses sharing God's word through her baking. I was immediately intrigued when I found her and have been waiting to try her for some time. Carson was so sweet to meet and talk to today at the craft fair we went to. We grabbed a loaf and some cinnamon rolls. We cut into the beautiful wrapped loaf tonight and it was good. But then I warmed it up and it was probably the best sourdough I've ever had! Amazing chew and texture. Great taste. I wanted to eat the whole loaf in one sitting. I can't wait to have the rolls in the morning and I'm definitely going to have to order some bagels and more bread from her. She's gained a huge fan of a customer in our household. God bless this woman and her family ministering through food. I love this concept. Can't wait for our next purchase!
