    Stumbled upon this place and wow was I amazed. The crêpes and quiche were so delicious. The portions are very generous. The service and ambience are also quite amazing. Service was fast and friendly.

    One of the best cafés in Conroe, hands down. The coffee was well-balanced and not overly sweet, and the breakfast plate had the perfect mix of savory and sweet flavors. My friends and I had a great time chatting with the staff and owner, they were incredibly welcoming and genuinely kind. Great people serving great food. I'll definitely be back.

    This is the best french café in the area. I have tried almost all of the french cafés in The Woodlands, Conroe, and Spring. This place is always delicious and always has the most attentive and friendly people working here. We are always greeted with a smile. The Tartufo pizza had a splash of Truffle oil and that little bit enhanced all the other flavors. I love the decor, and having some baked goods is a plus. It is always full so call for a reservation to avoid waiting times.

    I have eaten here many times over the past few years, and the food and service never disappoints. The menu selections have something for everyone from quiche to pizza the French way. You can choose to purchase a coffee and pastry to go or enjoy a sit down meal. I have done both. The coffee options are good and the French roast coffee is smooth enough to drink it black. The pastry selections change and they regularly have croissants, both plain and with chocolate. My dine-in experiences include crepes, both savory and sweet, and every breakfast dish on the menu. Their quality is consistently good and is similar to my personal experiences in France. The ambience is clean, modern, and delightful. I highly recommend this place to others. Bon appetit!

    Walked into Paulette's on a weekend morning--got greeted right away. They told us it'd be about 10-15 minutes for a table, which was fine, but then the owner saw us, stepped in, and just made it happen. Pulled two tables together, sat us down without fuss. That kind of thing goes a long way. We ordered the Tartufo Pizza--fire. Topped with burrata, and I didn't leave a trace. Also got Paulette's Breakfast, which came with a little spread of items: a fresh baguette with butter and jam, a pancake crème brûlée (yeah, that exists), and a croissant with cream. Nothing over the top, but everything was done well. Good ingredients. That's all it takes. Margherita Pizza was solid too. We sat close to where they make the pizzas and got to see both of ours go into the oven--nice touch. Service was smooth the whole time. A few different staff members checked on us, and the owner came around more than once to make sure everything was good. You can tell they actually pay attention. Place is small, no surprise it gets busy, but they make it work. Feels a little like a café you'd find tucked away in Paris, but without trying too hard. Just doing their thing. Definitely worth checking out. I'd go back.

    Why 5 stars? Because this place is just all-around awesome. --- --- --- I have had Paulette Cafe on my to-visit list for as long as I can remember, but finally had the opportunity to stop in recently. I'm so mad it took me so long. In an effort to not bury the ledes, the Prosciutto Pizza was one of the best pizzas I've had in all of the greater Houston area. I will think about it for quite some time, and those thoughts will probably end up with me making a return visit in the very near future. What's crazy is that, despite my highest level of praise of that pizza, it wasn't even my favorite thing that we ate! The Croque Monsieur was perfect. I am so lucky that my wife only ate about 25% of this because it was pure crack to me. We also ordered some french onion soup and some beignets, which were just okay, but we were able to to end on a strong note. There was some kind of peach concoction dessert crepe and we absolutely loved it. Throughout the whole experience here, we just felt like everything was made with quality ingredients. It definitely reminded us a lot of eating in Europe. We will definitely be back!

    Came here Saturday morning for an early lunch. It's such a cute little spot, and I was intrigued by their desserts, breakfast, and pizza. My husband wanted breakfast, but I decided to try their pizza as I cannot pass up a good pizza. The crust was just the right balance of crispy on the outside, soft on the inside. The pizza itself was delicious and big enough to split (I got the smallest one). I did get a bite of one of my husbands pancakes, and I can't wait to come back and have those as well. Their pastry display on the way out also looked incredible. Our service was fast and friendly, and even though it was a busy day we did not have issues getting parking outside on the street. We will definitely be back!

    When you walk in, you see this adorable café. Everything was neat, and it smells of pastries (which I loved)! Michael and Zac(h/k) were wonderful. I got the Riviera salad and their strawberry matcha. Though they were busy with their lunch rush, they were very attentive! Michael is a sweetheart; he pulled my chair out for me and, even though it didn't bother me one bit, he gave me dessert on the house for my bread coming out a little late. What an amazing family-owned restaurant. You don't see many like these anymore, I will definitely be coming back. Thank you again!

    One of my favorite places when I'm in the area! Simple dishes.. delicious beignets: raspberry & plain. Ask for a side of chocolate dip. Light and fluffy and addicting!

    The atmosphere was very cute and welcoming, I love the French theme! The food is incredible, as well as the baked goods. It seems to be incredibly authentic, and I learned the owners actually came over from France! JR was our server and he was very attentive and warm, he had great recommendations from the menu. A beautiful cafe that was missing from downtown Conroe, and Paulette Cafe is doing a great job filling that void!

We ordered a few plated entrees from the breakfast menu and a couple of desserts from the bakery display. The execution was ambitious (good presentation & visually appealing), but the tastes and textures left a lot to be desired for the palette. Chicken & Waffle - Extremely dry, dense, and gritty waffle, with chewy, tough chicken tenders in a sweet batter that reminded me a bit of funnel cake mix. I asked our waitress if there might be a sauce or condiment that would pair this dish well (in hopes of adding moisture & flavor), and she brought me sausage gravy. Was not a fan of the gravy, and it offered no improvement to this dish. Croque Madame - I've had this dish at other places and was excited to try it here.... Sunny side egg perfectly cooked, but the bechamel sauce (and possibly the cheese, too) had an overly-sweet & milky taste that too harshly contrasted with the pastrami IMO. Kouign Amann - Have had these pastries elsewhere (they're usually a favorite of mine), but this one was quite different.... and not in a good way. To put it bluntly, it was stale and boring. Tasted like an old croissant topped with simple syrup. Super disappointed with this one. Pistachio cake - Served to us frozen. I asked the waitress if it was supposed to be like an ice cream cake, but she shrugged and said she didn't know, explaining that it was new and they'd only served 2 slices before... I took it home and let it thaw, but it wasn't much better in its softer state. No flavor at all; not even a hint of pistachio. I appreciate the coziness of this little cafe, but unfortunately I don't think I'll be craving anything on their menu again anytime soon.
