    Delicious tortellini en brodo but the tagialette needed a bit more flavor. Shop is takeout only and I would advise you to go to the bar in the corner to order a drink and enjoy your food there. Seems like that's what most people do and their drinks are so affordable. Overall can't beat the price for some delicious fresh pasta, looks like only 2 people runs the business and that's when you know the family owned shop is legit.

    A charming spot run by older ladies where you can taste fresh pasta made with care. It's very small (about 7 counter stools) so most people do takeaway. We chose this spot as dinner #2 since it was right across from dinner #1 (a pizza spot). Tried the Bolognese (when in Bologna, right?) and the Tortellini in Broth. The broth was very comforting and nice to drink soup when it's been a few days of pasta and focaccia. You can taste the difference in the pasta texture for sure. Prices are extremely reasonable, so come to this spot for a no-fuss pasta option!

    I think this place is overhyped, but then again this was the only strictly fresh pasta place I tried (but NOT the only fresh pasta I tried in Italy). You can see the ladies (a mix of young and old) working large batches right behind the counter. They also have premade panna cotta and creme caramel. Pasta was okay, and it IS freshly made, but don't expect anything out of the ordinary based on the generous five star reviews on travel sites. Overall, it's a good option for last minute take-out, but I don't think it's a place worthy to go out of your way for, unless you have time to kill or are staying nearby. FOOD// All ready-to-eat pasta come in a sealed plastic container (no worry of leaks if you're taking it back). Plastic-ware and napkins provided. Portions and prices are equivalent to a sit-down restaurant without the sit-down experience unless one of the few stools inside the place is open. Alternatively, you can go to the bar catty corner from Naldi's, where you can sit outside at one of their tables so long as you order a drink. The latter is the better option since Naldi's is quite small (like, 5 other people waiting alongside you already feels like a crowd). They have a buzzer system now, so after you order you can go get yourself a table and drink across the street then go pick up when your buzzer goes off. Also, no worries on the language barrier. As of 2018, menu is in both English and Italian, and there are several multilingual signs inside (English, Japanese, Chinese, French). NOTE that although the place opens at 9am, they don't serve lunch items until after 12pm or 12:30pm.

    This is hands down the BEST pasta I have ever had! Small unassuming shop that is always busy. You can see the pasta being made with great care. They are very helpful in there and if you go inside there are some English menus. Went for the Tortellini with Ragu sauce. Obviously with cheese on top! Freshly made as had to wait 5 or so minutes to get our boxes of pasta. We wandered down the road to a bar who were happy for us to eat there whilst we ordered some drinks! Best pasta place in Bologna no doubt.

    With the unfortunate prospect of time only for a quick lunch in Bologna, we chose Pasta Fresca Naldi. The sweetest ladies own and operate this restaurant and while I ordered just 2 pastas she gave me a 3rd pasta for free as it was our first time in Bologna. Gracie Mille. All the pastas here are made by hand and it is well worth considering one with ingredients that are in season. Pro Tip: With food in hand we went to a bar across the street where we enjoyed some wine with our pasta.

    The place is so small that I thought I was at the wrong place. but wow... I had the best pasta here in this tiny store. The tortellini in beef and chicken broth is to die for, it was so good that not only we finished it all there, we packed a box to go for our train ride 2 hour later. This is mostly a to-go place that can seat 8 people (very uncomfortably) max. It seems to be a local favourite that a lot of regulars were there getting their usuals.The lady who appears to be the one running the store is super friendly and helpful. She handed us the English menu when we were scratching our head over the Italian on the blackboard, and gave us some free samples before we left. If I can choose one place to go back to in Bologna it'd be Naldi's.

    This place is tucked away and worth the trip for authentic pasta. We tried the Tagliatelle al ragù and Ravioli Pomodoro.... both were delicious. You can eat there at the counter or take away. The staff was very friendly and happy to help, but not in English.

    Great experience at this pasta shop that mainly do take-out. The fresh pasta menu change very frequently, the have lot different style, even lasagna. What make the place interesting to me is the history of the cooks. I felt there is only tourist in that place, it can be quickly packed during the lunch as there is only a dozen of seats. Prices are correct, we wanted to try different kind of pasta, but just after one lasagna (the green pasta lasagna), I was almost full! P.S. Because we were in Bologna, I wanted to try this :)

During World War II, the Nazis took over the building, a villa, making it their headquarters in 1944. The family had to walk for two days to Florence while the Germans occupied their home. Once the Nazis fled from Allied Forces, they returned home and were the first pastificio (pasta factory) of 36 in Pistoia to resume operations after the war. They are the only remaining pastificio of the original 36. The factory has been somewhat automated since 1950, but many of the pastas are still handmade. They have numerous varieties of pasta, including their signature brands, made with only Tuscan flour from the Pisa area. They recently unveiled a pasta in the shape of Pinocchio characters called "Le Bugie" ("the lies"), the result of a scholarship competition in the local schools. The factory employs only six people, but they produce a wide variety of pastas using old family recipes and processes. The small river behind the factory once spun the turbines beneath the building which allowed them to resume operations so quickly after the war. Special drying units maintain constant temperatures between 32 and 35 degrees Celsius (90-95 Fahrenheit) , ensuring that the pasta does not break, reducing waste, and resulting in quality products. Pastas take from 24 hours to six days to dry depending on the shape. The bronze pasta forms used to give the pastas their various shapes result in a special consistency not found in mass produced brands (De Cecco, Barilla). Their pastas take much less time to cook because the pasta from the brass forms allow the boiling water to saturate the pasta instead of cooking it from the outside. The water they are boiled in also has much more starch then that of the mass produced brands, allowing the water to be used to thicken sauces before serving. The valley in which the villa sits is quiet, green, lush, and much cooler than smoldering Florence, so it was a breath of fresh air, literally, after a month in 100 degree Florence and its wall-to-wall tourists. Giuseppe is working on adding a small gift shop and cafe, culinary demonstrations, and possibly pasta making and cooking classes in the near future, but in the meantime a tour of their operation is a must if visiting Tuscany and tell him CombatCritic sent you!
