The casing has a great snap to it. The meat is well seasoned without being too heavy. There are no big lumps of fat or gristle that you find in cheaper chorizo. The true testament to how good the chorizo is can be seen in the many meals where it was served and people fought over it, eating way more than they usually do, then passing out from food coma. I've witnessed it every time this is served. Even people who are full will eat the chorizo if you cook it up later.
