Ordered online via their website for takeout. Process was fast and easy. Arrived and service was fast and friendly. Ordered the works which was delicious since I haven't been here for awhile.

How hot should a fresh pizza be? 97.1 seems...lacking?

I normally like Papa Johns but had a bad experience tonight. Friday night dinner rush. App told us there would be a ~40 minute wait. After ~60 minutes app said the order was complete. We had no pizza. Wife called and they confirmed they were busy and the order was cooked but awaiting a driver to deliver. ~20-25 minutes later (restaurant is ~10 minutes away) called back. Order had just gone out for delivery. It was now ~45 minutes late from ETA (~90 minutes after ordered). Asked if they would be doing anything because of the long wait, they said they couldn't because it was the app's mistake and not theirs. I indicated that it all looks the same from my perspective. Pizza then arrived during back and forth on phone. Told the guys on the phone it was warm (not hot). Guy on phone hangs up after wishing me a good night. Wife really disagreed that it was "warm"...she called it room temperature. We got a thermometer out and it was 97.1 degrees. So wife and I agreed it was "body temperature". Argument successfully defused. All in all, the first slice of pizza was about as warm as the last slices are after sitting on your counter for an hour. Not super savory. But the order was accurate and I'm hopeful that this was a one time thing.

First I gotta shout out the staff who were incredibly friendly and helpful. I think they mainly do takeout because the dining space is relatively small but still feels open thanks to the huge windows. They've got one big TV that was showing the history channel? We split 3 things between 4 people and definitely didn't need the 3rd pizza, as delicious as it was. Coal Fired: The crust and bake are the most important part of a pizza and they nailed it here on both counts. It had a nice fermented flavor but wasn't tangy or "raw" at all. The bake was perfect. Crispy on the bottom and rim with nice leoparding (spots) but the crust interior was pillowy soft and just chewy enough. The overarching theme is "salty" in the the best way. I love salty foods and they use a lot of low-moisture, aged cheeses that amp that aspect up. Bar Pizza: This was pretty good, but felt like it didn't know if it should be deep dish or tavern? Wasn't quite as thin as a midwest tavern so you didn't get the crispy bottom I love, but wasn't thick enough to give the nice, fluffy focaccia chew. Crispy edges were amazing, though, as you'd expect. The middle got really soupy and if you wanted something topping-heavy like "The Sarge" I can see it turning a coal-fired version into floppy mush. It still hurts my soul paying ~$30 for a pizza, even 16", but this is a place I would go to with friends for a special occasion and split a pie or two. Plus they have seasonal cannoli! 5 stars for surpassing my expectations.
