Went up to our room and changed into shorts and sandals, for a walk around the right hand side of the lake. Came back to our room and changed back into long pants and polo shirt for our 6pm reservation for 4. Got there early, checked in, giving our room number, and chose a table outside in the 83 degree sunshine. Two others from our tour group joined us, letting them sit in the shade, under the sun umbrellas. Hotel guests get priority seating inside over visitors not staying at the hotel. Neighboring table of apparent outsiders, including two millennial guys in shorts and sandals, while the ladies were dressed much better. One guy had two pigtails! We ordered the prime rib combination, which came with side plates of shrimp cocktail, tomatoes and creme brulee for $85 CAD. The other couple ordered the $38 gnocchi and $44 duck breast. Service was exemplary. We ordered two house salads for $38, which were great in appearance and taste. Maple dressing over mixed green salad, with pecans, raisins, grapes and mango. Our appetizers were shrimp cocktail and tomatoes, both prepared well. The dish came with a dozen tail on shrimp. My prime rib was perfect -medium. Wife wanted rare prime rib, but got a medium. I ended up eating her meal, as there was no way to cook the food in our room before leaving the next morning . She found the meat too tough. I thought Black Angus prime rib was better. Chef waiter came out and served her a course of sirloin steak to make up. Dessert was crème brulee, another decadent choice, with perfect presentation and large portion. Midway through the meal the winds picked up. The hosts lit up the outside heaters, and provided light blankets for us to cover ourselves. Again great service and hospitality. Fantastic ambiance right on Lake Louise, with towering mountains and a glacier in the background. Meal was the most expensive meal for 2 ever for us. And we had not even eaten at the more expensive restaurants at the hotel! The other two had left to hike before the check came. The tour company had paid for the meal in advance, so we didn't get stiffed for the $318 CAD bill for 4!

When I came in the Summer of 2025, I noticed they use the 1883 Lavender syrup from France. Sounds fancy right? But it actually doesn't use any actual lavender syrup; the flavor is all artificial. It also contains Red 40 which has already been known to be a mutagen for 20+ years BEFORE, before RFK. My syrup had developed a microbial (bacterial most likely) biofilm and growths within the syrup. My syrup still has 6 months before the expiration date. If the syrup is being used quickly, then maybe it isn't a problem, but I don't think lavender is a super popular flavor. So if you're at the Fairmont, check the bottles of syrup flavorings before you order, especially if it is the 1883 brand. Also, if you're staying at the Fairmont Hotel...why don't they just make lavender simple syrup in the kitchen? You mean to tell me this fancy hotel can't afford to make simple syrup? It tastes better too.

Apparently it's been snowing heavily and due to the heavy snowfall, the hotel could not put up the rink until it would stop snowing. Lots of people were hanging out on the lake. The hotel had ice sculptures and an ice bar. I saw a few horse drawn carriages as well. They had a well lit tunnel. Their lobby was decorated with Christmas trees and garlands. For the afternoon tea, I got the Egyptian chamomile tea. It had sweet elements to it and was considered a flavored tea. I did try it with sugar and milk. Although it didn't taste bad, I prefer to have my tea without anything. The tea itself was good enough for me. In addition to the tea, my meal came with a glass of prosecco. For the food, I got their basic menu which comes with 4 varieties of cake, 2 pastries, 3 sandwiches, a croissant and deviled egg. They offer different foods as well depending on your dietary needs. They have seafood, vegetarian, kids menu and I believe gluten free as well. Wait staff were very friendly and accommodating. My waiter was so kind and helpful. My view from my table was beautiful. I plan on coming back again.
