The brisket was flavorful and plentiful; delicious. The bartender was busy, yet still attentive. The food orders we saw all looked good and plentiful. We did the chef's menu with the pairing. Nilgai tartare with avocado and toasty grilled bread. Corn ribs that made me emotional about a vegetable. Mesquite Gulf shrimp in a beurre blanc I wanted to drink. Texas quail on ruby slaw with wild boar bacon. Bison in a pasilla-pecan mole, tender as a love song.
