I've eaten here many many times, and to be totally honestly I'm always undewhelmed by this place. I should mention that I spent years in the S.F. Bay Area California so all Mexican food will forever be downhill from there. For me you will never top a Mission style burrito. IYKYK. ;) Although the food always looks great there are elements that taste like nothing. The salsa tastes watery and bland. Same for the guac. Nothing. The stuff I make at home is way better. The crema, too. Its like they just dont season it enough or something. Its too bad because all the elements for it to be amazing are there. I think its great there is a keto option for the tacos. So lucky to have stumbled upon this place because it actually should be a place you come to purposely in Pahoa. Why? It's really delicious, freshly made to order, and affordable! We ordered the mulitas and the mole chicken enchiladas plate and thoroughly enjoyed every bite. I know mole was a special item on the menu and glad it was available. Review #18 for 2021. A Latina friend from Los Angeles that was visiting said that Panchos is the best Mexican food she's had in years. I questioned if it was context specific because Hilo doesn't have much Mexican food, and she said that the food is objectively good. I tried Panchos birria with her (my first time having birria), and I liked it a lot. She said what made it good was the many layers of flavors. I got it again for my family, and they liked it too, but be warned that it's kinda spicy (which I like, but my mom couldn't handle). Panchos is in Hilo on Fridays starting at 10:30am in the HPM parking lot facing the highway. I suggest pre-ordering on their website on Thursdays because the line gets long, and once they're out of something, they're done. That's food truck style! I've also had pastor nachos and barbacoa burrito especial. Both were huge and delicious! Great deals for $9 each. Their $2 tacos are super tasty and a steal. Tried the esquites (like elotes in a bowl), and it was super yummy. I'd order everything again, and I want to try other things too. Service is great, and I didn't have any issues over the three times I visited. I'd say that Panchos is the best Mexican food on the Big Island! Everything we tried was delicious! There is always a crowd and a line but it goes by pretty fast. There's been times that we've gone toward the later part of the day when they've run out of certain items but that's what happens when you're serving up yummy dishes!!! We love the mulitas, elote torta and off course the birria. They also have horchatas and other refreshing drinks - a strawberry and mango one (sorry I can't remember what they are called ) customer service is always good. Delicious is the best word to describe Panchos taco truck! So very happy to have found them. Their steak was full of flavor and grease, but that greasy steak gave my burrito so much flavor. This mobile food truck just got upgraded to a trailer. They spend Tues/Wed in Pahoa and Thurs/Fri in Hilo 10:30-3. They always have a line. Must be doing well if you can open only for lunch. So far have tried the burritos which are amazing. Just beware the especial vs the "super" which is the size of your arm! They toast the outside wrap just like they do back in SF mission district which I loved. Can't stand cold cheese on a burrito. I also tried the "sincronizadas" which was fun to say. It's a quesadilla but with roasted peppers and choice of meat. I got the steak. Loved it! I also like their Chile verde pork. Salsas we're good. Chips not needed. Get sodas or water out of cooler next to stand. There are some tables and tenting outside Pahoa location. Park past the fence but they are serious about closing time. In general I rarely give 5 stars for a restaurant review. It has to be really special. And Panchos fits the bill! I've been eating their offerings for 6 years now and it's far and away the best Mexican food I've eaten on the Big Island. I don't understand all the positive reviews. Makes me wonder if the owner is deleting negative reviews. Positives: salsa is spicy and perfect Two of the three meats I tried were juicy: pollo verde and barbacoa That's it for positives, so 1 Star for salsa, 1 for 2 juicy meats, 1 for being open and masking during COVID. But: Still too expensive. $2 for a taco might seem cheap but when they're so small you have to eat 5 to be full, a ten dollar lunch isn't cheap. Most of the meat (I had pollo verde, barbacoa and carne asada) was too salty. Pollo and barbacoa were juicy, but the tacos overall totally lack the real Mexican onion and cilantro because they put a tiny amount on each and it's just not nearly enough. All you can taste is MEAT, as if they're not seasoning properly (except for too much salt). Had to ask for pickled carrots/peppers..."Oh yes, we have pickled onions, here"...then getting about an ounce of pickled onions for TEN tacos. It's not easy to find really good Mexican food here on the Big Island. Especially if you're born in Los Angeles like I am. However, Pancho's is pretty close as they come to authentic. Most of the other Mexican places on the island are just ok... except for the soft mole carnitas taco's at Temple Bar which are pretty damn good. I decided to venture out of the office for lunch and realized it was Friday which meant Panchos would be in tow. Surprisingly there was no line today. And they had not sold out of carnitas yet. I ordered the taco plate. 3 tacos (mix & match ok) with rice and beans. Added sour cream but no cilantro or raw onions. i know i know. Anyway, the beans were very good, the rice was ok... not like the Mexican i'm used to but pretty good. The soft tacos were really good. All for $10!! If you have a chance to be in Hilo and near the parking lot of HPM on a Friday, make sure to stop by. Definitely the best Mexican food I have found on the island (they come from California, originally, I believe). Even better than most taquerias I'm used to in California, because they have more menu variety (including mole!). Only downside is they can only fit so much food on the truck, and can run out because they're so popular. So get some while you can, if you see them! I just mention how I love a good roasted pepper and one magically appeared with my meal! The only place where I can get my super burrito fix. Proud to support this local family run business. read more
