They've made constant improvements to make the patio more attractive (they even added a covered area for cold or rainy days.) I figured they had to do something right to attract enough customers for their breakfast burritos in order to buy a truck. I am so glad I finally visited El Mercado to try their breakfast burrito. It was by far the best I've had for a very long time. I actually had given up finding a very good one in Colorado. I had the chorizo, and my husband the bacon one. That burrito was so moist it melted in my mouth, it was the perfect balance of cheese (lots of it I assume), chorizo and whatever else they put in it. A sign also says that they now offer breakfast burritos all day. Sitting at a table next to us was someone raving about his tamale (he told me they have added a new one to the menu and it is the best- $2 each, blue sign on the window). They seem to do a good business with people ordering to go, a lot of them regulars and I totally understand why. I will be going back to try their lunch menu soon!!!
