-Celiac- Gluten-free Review-
First off, huge shout out to Holidaily Brewing for having Pambasos on the particular day we visited. I would have not known of their existence if not for that- which is why I'm creating this business page for them bc they deserve ALL the shine.
Pambasos is legit legit. The real deal. Not "it's passable for gluten-free Mexican food." Naw naw naw. Let me walk you through my foodventure.
First, chips and salsa. Simple enough, but most Mexican food enthusiasts can tell you that the quality of the salsa can be really telling of what you can expect for the rest of the quality of the food. I understand that heat/texture/chunkiness of salsa is a subjective opinion, and my subjective opinion is that this salsa was perfection. Brought me back to the hole-in-the-wall, shopping center taquerias in SoCal, grabbing my 11th to-go salsa container and cramming it full of pickled carrots and jalapeños. That thinner red salsa with onions it...it's just perfect. Chips fried perfectly with a nice dusting of spices that enhanced the flavor. So they had me teed up and ready to see what else they brought to the table (pun always intended).
Here comes the showstopper- the WINGS. If you have celiac disease and love wings like I do, you know how challenging it is to find wings that are 1. Safe and 2. Good. These wings were some of the best I've had. The crispiness, the flavor....the dry rub knocked it out of the mf park. My tastebuds died and went to heaven. Paired with my other favorite food group, French fries (Garlic Parm fries from the menu), I just needed a moment to live completely and totally in the absolute joy I experienced. Both perfectly cooked and crispy.
But why stop there? We also ordered the fried tacos and California burrito which I never thought I'd be able to order out after being diagnosed. Both were texture dreams and the flavor was A1. I could go on and on but just know I was BEYOND happy with Pambasos, yall. A completely goals food truck for this celiac foodie. read more
