Not going to lie, the exterior is rough around the edges. Also, you will find signs that point you in the correct direction to the entrance but that still didn't stop me from telling my husband, " this doesn't feel right" and forcing him to walk all the way to what appeared to be the front to try that first. The real entrance is a back door that looks pretty uninviting but trust me, you want to enter it. When you are inside you will be met with racks of freshly baked bread ready to go home with you. If no one is around just holler out and someone will be with you promptly. Palermo's is a commercial bakery that you can find in nearby grocery stores but why not go directly to the source and support local. We picked up a sourdough baguette, a sweet baguette, and a few sandwiches rolls. Overall, my favorite was the sourdough baguette. I'm a sucker for a good baguette. I wanted it to be slightly crispy on the outside so that you hear the crunch when you lightly press it between your fingers, but I also want it to be dense enough that it springs back... all while retaining a soft and airy interior that isn't TOO airy that, when you slice it to make Crostini, the air pockets are too large to hold anything on top of it. Is that too much to ask? All jokes aside, their sourdough baguette was excellent. A bit firmer than I like, but an even texture on the inside, and the tanginess was exactly right. The sweet baguette was a bit undercooked in my opinion, and did not have the crispier texture or color on the outside that I was looking for. The interior had the density I was looking for, but the sweetness was missing. I also ordered a sandwich bread And it was "fine" but not anything special. I'm excited to come by and purchase more sourdough and other bread options, but I'll pass on the other two that I tried. Remember to bring cash as this is a very casual walk up spot. There was one gentleman working in the bakery when I arrived, and he had to stop what he was doing in order to help us. He was friendly and informative and made us feel welcome. Finding the entrance is a bit confusing at first but they do have plenty of signage to direct you to the right door. Even so, when you walk up the steps, you feel like you are entering through the back entrance of a restricted employee only area. Don't let the grimy exterior fool you. Inside is very clean and this is a working commercial bakery. You won't find a counter or register in sight. Just say hello when you arrive and someone will be with you shortly. Enjoy! read more

Confirming what others love about this place but especially love the mini ciabatta loaf. Delicious floury bread enjoyed best with a little butter.. It's best if you read ahead on yelp and know what you want when you go as there is no posted product list that I could find and the guys seems busy but attentive when you go in the back door. Hard to find, plus I went early one December morning when it was still dark out. I found where to go and picked up a panettone to gift to my grandpa! He was surprised some place local had them and really enjoyed the texture and flavor of theirs! There are bakeries (which are specialty places for luxuriously decadent handmade nuggets) and there are bakeries (commercial bread loaves), and Palermo is clearly one of the new destination commercial breadmakers! It reminds me of the old "Columbo" sourdough bakeries near the Oakland Coliseum, where you could get the freshest loaves at wholesale prices. It is harder to find than most (it has a giant TOGO sign out front but otherwise you won't see any signage from Fremont St), but you can see the flour on the floor, the machinery for mixing, and the sacks of flour. You enter from the side door, and there you can choose from at least 10 types of bread, from their famous ciabatta to baguettes of sourdough and sesame sprinkled. This isn't a typical bakery with a storefront but a giant bread factory that bakes a lot of bread to sell to retail clients and to fulfill commercial order deliveries. Just head to the back entrance (there really isn't a "front door") and grab whatever bread you want off the cooling racks! My mom has been wanting to try out this place ever since we discovered Palermo Bakery's ciabatta at a local European food shop where we asked for the name and address. Since we were in the area, we stopped by to buy some of that delicious bread that we've been dreaming about. I guess we didn't come early enough (we came around 7:30AM). I would suggest 5AM-7AM before they head out for deliveries or call in advance. We managed to buy 4 loaves of ciabatta and the last two rolls of Dutch Crunch (which is a must in NorCal -- it's such a rarity in SoCal to find freshly baked Dutch Crunch). In total, we paid $9 for fresh bread!! Make sure to bring cash! The staff gave us freedom to pick and choose our bread and gave us a quick tour of the bakery which was cool. They give you sturdy paper bags to hold your bread and sleeves that are freezer-friendly. Definitely recommend for quality, authentic Italian and traditional bread. I love this place. It's a bit odd at first going into their wholesale area as this is a working large bakery, but it's easy. First you navigate to the Togo sign and make an immediate right and park in the bakery lot. Then you walk around to where the drive-thru area is and walk through the double doors. Sometimes they are busy filling orders, but they get to you pretty quickly. You get to choose the breads you want, they bag em, you pay cash, and you walk away with gorgeous fresh fluffy loaves of deliciousness for a fairly inexpensive price. I stopped by every time I'm on the peninsula. They're my fav. Tried the others. Paloma has bread down!! That's why a lot of the sandwiches here are so good. Go. You won't be disappointed. read more

The Palermo bakery is a commercial bakery that bakes amazing bread, etc for various businesses around Monterey County. They also allow customers to enter the building and make purchases. What's not to say about the ever so delicious Panettone? This has become a holiday tradition to "sneak" into the back door of the bakery, under cover of darkness, greeted by friendly staff who graciously help you grab your stash. This is by far the best Panettone ever. We are Italian so we don't make this claim lightly. The bread is tender, almost cake like but holds together well. If you can wait to dig in, it toasts to perfection. We look forward to it every year. A friend told us about this place. If you want delicious and inexpensive breads this is the place to go. They are a wholesale distributor but they also sell to the public. It can be a bit intimidating trying to find the bakery, since there aren't signs in the front of the building. You need to head to the back of the building where you'll find the "Palermo Bakery" sign. Not sure what time they open but they close at noon. When you walk thru the glass doors, you won't see any counters just bags of flour and bakery equipment. Walk towards the back of the bakery and turn right. The man there was really nice and even offered my daughter a piece of bread to sample. There are lots of breads to choose from on the bakery's rack...baguettes, sourdough, ciabatta, hamburger buns, raisin sandwich loaf, whole wheat sandwich loaf, etc. I bought 3 mini loaves each of ciabatta & french bread, sourdough & baguette and it only cost me $4.00 (no tax), can't beat that here in Monterey. We will definitely be coming here from now on. read more

This isnt just a bread bakery. This is a place that creates memories, family traditions, and the taste of home. I was raised on this bread, my husband was raised on this bread as is our son. From dinner, to special occasions and weekend french toast we only use Palermo. one time when my son was around 4 years old he asked for french toast.I had no Palermo on hand so shamefully & quietly made it on sandwich bread thinking he woudnt notice. This bread....I can't even..it is so amazingly good!! You go in the back door of the bakery and buy it fresh off the rack! We got 7 loaves for 6 bucks! And let me tell you...SO GOOD!! They bake some fantastic bread! We were first introduced to their bread when DH made a run for sandwiches during daughter's surgery back in December. Can't remember the name of the deli he got the sandwiches from. Can't remember the sandwiches, either. But sure do remember the bread! Unfortunately, they are not retail so no bread available through them to the public, but............. Palermo Bakery... I bet, there is a 90% chance that your favorite deli makes their sandwiches on bread from Palermo Bakery. So ask yourself, what's the most important part of a sandwich..?.. Can't recall what year they opened but it seems like we've been eating their bread my whole life. The owners are great, anytime there is a local dinner fundraiser you'll see the donated bags of PB everywhere. The owner(s) are from a small fishing village in the Palermo region of Sicily, which most Sicilians of Monterey are. I'm going to butcher the spelling, schefatta (pronounced she-Vad-tha) is what my Nano called pizza and 100% Sicilian is Sfincione (Sven-juni), its a thick pizza, topped with, red sauce, onion, anchovy, bread crumbs and graded parmesan, so damn good. I think you can only order it in large sheet's, so its ideal for parties. My grandfather almost got into a fight in WWII because a Napolitano US-sailor never heard of schefatta.. They were day dreaming on things they wanted to eat if they were home. Food and women will make most Sicilian/ Italian men fight at the drop of a hat, unless we are to full from eating!!! This bread is life changing. Not a single day goes by that I don't daydream devouring a roll from here. The best Chocolate Panettone!! They also bake the original fruit panettone which is light & pillow. If you don't like a lot of dried citrus fruit this is the one. They do sell to the public but don't advertise as such. The next time you go to those 5-star restaurants, and the bread is so good it most likely came from Palermo Bakery. This place is amazing. They supply the majority of bread and rolls to the majority of nice restaurants and delis in the area! You definitely feel in the know going here, like you're a G in the underground bread world. There is no counter, no service people. Just straight up bakers and rocks of delicious carbniness . Enter off the side by the loading area. The bread is so high quality and ridiculously cheap, ciabatta, marbled rye, telera, dinner rolls, sourdough, French, Italian plougjman's, you name it! My favorites include the rounds for sourdough bread bowls and their amazing parbaked pizza crusts! Yum! We found out about Palomar by asking a favorite Carmel restaurant where they get their bread. They are primarily a wholesale bakery for restaurants, but they sell directly to the public. Warning - they close at noon, and the selection is varied, depending on what their various accounts have ordered. If you call early (6:30 am opening) they will hold your order for you. It's a bit hard to find, but if you call, they will give you directions. My wife went there twice in two days, she was so ecstatic to have found them! read more

I discovered this place through the Marina Farmer's Market. The gal there was so very informative & the ciabatta loaf I purchased was soooo good! Chewy on the inside & just right on the crust. It was a little more than I would pay for a loaf a bread $4, but so well worth it. I look forward to getting the other products like the sandwich loaves and pizza crusts.
