Not only did she contact us frequently to check in and run ideas by us, she worked with our budget to provide the FUNNEST buffet spread I've ever seen. Not to mention the food! The bistro filet sliders were a HUGE hit, the highlight of the party, and I could have eaten the deviled eggs, chicken salad and salmon sandwiches all night! My husband and I planned a very intimate wedding and reception on the Hidden Cove/Monastery beach in Carmel and we got our food delivered at the beach. Pacific Coast Catering was recommended to us by Kathee from Carmel Weddings, and we were so lucky to have them cater for our wedding reception. A.B. Introcaso was the sweetest person I have spoken to. Following a few email exchanges about available menu options, she called me and discussed my expectations, the venue, color themes and the settings in details. We wend over some personalized dishes like Tandoori chicken skewers (which very utterly delicious!) and a summer citrus salad with clementines, strawberries and roasted pecans (which was beyond amazing, as well)! She gave me very helpful suggestions for selecting a menu that goes with the beach theme and can taste delicious even when cold! Sh I wanted to get my own cutleries, glasses, plates and beverage. She helped me with ideas of how much space they would need, how to arrange them and keep them from flying off by strong ocean breeze! I rented a space at Toro Park in Salinas. We had about 100 people there and A.B. came up with a delicious menu. Ten out of ten would recommend. I probably spent a total of four hours on the phone with A.B. working out the details of our semi-destination wedding in Big Sur. We had a lot on our plate (pun intended) and if she hadn't been so gracious and helpful I'm sure we would have had some sort of disaster, but in no small part thanks to her, everything went off without a hitch! Except for us, we are now hitched. Our menu consisted of vegetable lasagna, lemon chicken, beet salad with feta cheese, citrus salad and roasted red potatoes with green beans. The first time I tasted the beet salad (at a tasting with A.B.) I was nearly moved to tears. Two days after the wedding I microwaved some left-over vegetable lasagna for breakfast and it was still probably the best lasagna I've had.
