Sal, the owner, is just an all around fantastic person who is crazy passionate about serving the best quality food with the best quality ingredients that are good for you and good for your soul. They have the Little G's \which gives you options for rice bowls and ramen but my son always gets the ramen here. He subs out the egg for some veggies and he is happy as can be. I've gotten the vegan ramen a bunch of times now and Sal is fantastic about making it to your preference. Want it spicy? No problem. Want more red peppers? You're covered. The broth is rich and flavorful. Although it is a bit more than maybe another ramen place, I've been able to get two meals out of my bowl every time I've come here, and that makes it plenty worth it for me. Stopped in for a quick dinner the other night. I saw this place had good reviews so we decided to try it out. It's a small place in Babylon close to the train but there were plenty of seats. I got the keto and added noodles (I liked what was in it) and we also got the classic which was with chicken as the protein and a lighter, slightly citrusy broth. Both ramens were really good and they food came out quickly. They also have a kids menu, either a ramen bowl or rice bowl with choice of protein. My sister and I went there for dinner tonight and had the opportunity to meet Sal the owner. We started with a delicious cucumber salad, with thin, fresh, crispy sliced cucumber, in a perfectly seasoned vinaigrette with sesame seeds. My sister had the beef ramen and I had the classic ramen however, I substituted shrimp for the chicken. It was absolutely delicious. While we were there, there was a steady flow of people coming in to eat at the restaurant or do takeout. I highly recommend this restaurant and we can't wait to go back again. I had the vegan ramen bowl which is made with chickpea tofu (never had this before and I liked it more than regular tofu) and spinach ramen noodles. It was delicious and filling. This is the first time I have ever had this place and it is so good. I tried the ramen salad and it was very good. It was the first time I had ramen as a salad form. The noodles were a little more al dente than I would have liked but the dish was still very good The owner was very friendly and very informative with his food. Sushi, Poke, Chinese, Ramen, all that stuff I have tried here on LI is not up to par. It's good but the flavors are always "fusioney" or at least made to match the American palette. Which is great because the restaurants should cater to their customers :-) BUT, sometimes you really want to tuck into a nice bowl of Ramen (or Poke or whatever) that really evokes the feeling that you're eating the real deal. No, when you look at the ramen, it doesnt look trad at all. But when you taste it... Damn! Noodles have a good chew, broth is surprisingly complex. The yuzu leaves a nice flavor trail with each slurp. And the Chickpea tofu is bomb! As a mostly-vegetarian I have to watch my soy intake but not here! We had the salad with Ginger dressing which had a nice and refreshing zing to it, the veggie ramen and the Matcha pudding. I'm going to bring a gallon bucket so they can make the matcha pudding for me in it. It's so light and delicious I could literally eat 5. Or 6. Or 7. I'm so happy to support a local business. Hear me out: It's missing the layers of flavor that really good ramen has. It looks right- Instagram worthy looking bowls- but it's just not there. There's no depth to the flavor. The noodles seem dry and the structure is stiff. Plus, I'm not sure how to phrase this but, the broth has no heart. Also I feel like there wasn't a lot of oil, which might sound like a good thing, but it's not. Oil helps the noodles keep their flavor - without it, it's just noodles and water. Did I hit a bad day?
