It is located in an old strip mall behind another building. This lead to no front door parking. So I found a spot and walked over. It is a small store with groceries to the right and a meat/butcher counter to the left. The store only had a couple of customers in it at that time. I strolled around the limited groceries and they had the basics. Then I wandered back toward the meat counter. Dividing the two sections I found precut meats. This is when I decided to do my test on chicken breasts. Couldn't find the full breasts so I went with smaller cut pieces. Just an FYI, you can request any cuts of meats at the counter. Those spare ribs might have been some student's midterm project. The meat is all displayed (shrink wrapped) in big glass cases. Prices are clearly displayed. Buy in bulk and save! Everything is clearly labeled with the Texas A&M logo so nobody gets confused about where you got your meat. They have helpful posters that inform the purchaser about where different cuts come from on the animal. The staff was super friendly and helpful. They offer a microwave in the corner if you need to warm up something and take it to go. My favorite is the sausage that's shaped into a football. Gig 'em! The steaks are phenomenal. Over 1 inch thick, beautifully marbled. They are grass fed and organic. We cooked them sous vide and then finished on the charcoal grill. My god, they were delicious. Juicy, flavorful, and like all authentic Wagyu should, the fat melts quickly and provides incredible flavor.
