When we asked the waiter to take the carbonara back because it was not edible, his attitude was extremely disappointing. Rather than offering to replace the dish or addressing our concern professionally, he told us that the manager had approved it and that we could simply take the food home. What made the experience even worse was the atmosphere of this location. The restaurant felt more like a factory than an authentic Italian dining experience. We noticed the staff using walkie-talkies to communicate with the host, and as soon as customers left their tables, the waiter would communicate with the host to immediately send new customers in to fill the space. It gave us the impression that the priority was turning tables over as quickly as possible rather than providing guests with a pleasant dining experience. The constant rush was noticeable and took away from what should have been an enjoyable meal in Rome. It is very unfortunate because we have visited Osteria da Fortunata several times in the past and genuinely enjoyed both the food and the service. We understand that service in Italy is often slower and more relaxed, and we have enjoyed wonderful hospitality everywhere else during our trip.
