Forget everything you know about takeaway liempo. Pork belly sold by traditional roasters like Andok's and Baliwag are nothing compared to the awesomeness that is Mr. Liempo. The old guard's version of liempo is nothing more but extremely fatty pork belly stuck on a skewer and roasted.
Mr. Liempo's on the other hand, adds in a not so secret blend of spices, most noticeably lemongrass. It's a technique that's popular with Cebu, which is where Mr. Liempo originates. The pork's crackling skin is always crispy so you never get that oh so sad feeling of having limp skin in your mouth. The pork itself is chock full of flavor and very tender. You wouldn't struggle with the meat even if you don't have a knife. There was one time on a pinch, we used Mr. Liempo as the meat of choice in a taco party we had.
