    That's not going to waste

I don't do sushi very often and it's not because I don't like sushi I just don't care for sticky white rice or any white rice because it does absolutely nothing for me but since it is what sushi is I have to suck it up once in a while. I do have to do sushi once in a while because I like the freshness and the layers of flavor combinations and since I do it so little I know nothing about sushi and I just order what sounds good. I ordered the hot flamin sushi burrito which is spicy salmon, spicy crab, eel, avocado, cucumber and spicy hot ramen for crunch. My burrito came with chop sticks, cute dipping tray, 4 soy sauce and 3 napkins in the bag and I was surprised to get chop sticks because a burrito is a hand held food that requires no utensils at all. The soy sauce is a god send because it makes the white rice edible for me. My hot flamin burrito came with ginger slices and a ball of wasabi which was on point because it had the nice clay like texture and proper nasal awakening action and complemented my burritos nicely. I was surprised to find a piece of blackened white fish in the end of my burrito because it's not listed as being in the hot flamin burrito. My burrito was very good and tasty which hit the spot even though it has all that white rice in it.

    Tonkotsu Ramen!

I've only visited twice, but both visits have been very good! On my first visit, I ordered the Eel & Avocado roll and the Spicy Tuna Roll. Both were delicious and tased fresh! The sushi rice was on point! On my second visit, I ordered the Tonkotsu Ramen. Tonkotsu style is my go-to for ramen, and I've had it at just about every place in town that offers it. I love the slighly salty, yet savory flavor of the pork-based broth, as well as the mouth feel of the broth's milky texture. Modern Maki impressed me with their Tonkotsu Ramen! Their Tonkotsu broth is definitely top 3 or 4 that I've had in town! The pork belly was practically fall-apart tender and delicious, and the bamboo shoots, fish cake, and other toppings were also on point. I skipped the corn because I don't think corn belongs in ramen, but that's just a personal preference thing. You want to pick up corn kernels with chop sticks? Have at it. What I really appreciated and found unique was that they serve the broth in a large bowl and the noodles and toppings in a separate smaller bowl that hovers near the top of the broth bowl, hanging by the rim of the bowl, so they don't make contact and don't get soggy. It is an absolutely brilliant design and perfect execution! The broth stayed hot, the lid was tight, and I loved every delicious bite. It's too bad the Health Dept. requires the boiled eggs to be fully cooked from a food truck, so they can't serve the proper soft soy egg, but this egg certainly did not disappoint. I look forward to trying sashimi and negiri, as well as a sushi burrito, so I can get a full idea of what Modern Maki can do, but so far, I'm a fan!

I visited Modern Maki over the weekend to take advantage of the sunny weather. I ordered the Crunchy Munchy Roll and the Vegetarian Ramen. I did not use the app to order, so there was something of a wait. That is my only critique really. The truck didn't appear to be terribly busy, but who knows how many delivery orders they were working on. The roll was crunchy, as promised, with a well balanced mix of flavors. Two chopsticks up for this. My ramen was packaged smartly, with the noodles and ingredients separated from the broth so the broth stayed hot and the ingredients wouldn't get soggy. The broth flavor was complex and well developed. It was not as deep as a mushroom base would be, but it was good and flavorful. There were plenty of noodles included to satisfy. I enjoyed this a lot and would certainly go back,

I went up to the truck with a friend and we ordered two rolls of sushi. She said can I get a (whatever she got) roll and I said and can I get a cucumber roll. Originally I wanted to order the tamago sushi but they were out of stock so that was a major bummer for me. We paid together since it was only two rolls. We were having a quick snack before a nearby exercise class so we didn't want to overeat. I suppose since we paid together that's why the sushi came together in one box which is fine. I thought it was strange that the food truck person only gave the two of us one pair of chopsticks and one soy sauce dish to eat our sushi with. We ended up passing the chopsticks back and forth a couple times until I went back to the truck to ask for another pair. We went at a time that did not seem busy and it took somewhere between 5-10 minutes for the two rolls of sushi to be made. Overall I think the cucumber roll that I ate tasted good although it's hard to mess that up. A positive sign is that I believe the knives they use are clean. I am a lacto vegetarian and do not eat fish eggs, sometimes I notice fish eggs on my sushi from dirty knives or stations at most restaurants. I did not have any stray fish eggs on my cucumber roll signifying clean working conditions in the truck. Seeing my cucumber rolls look nice and clean made me happy. I would definitely come back here when I am in the area with my friend. Hopefully the chopstick thing was a one time mistake because I don't want to be known as the girl who keeps coming back to ask for more chopsticks. The food truck area only had two picnic tables that I noticed but I'm sure there would be more if I kept searching. There are bathroom facilities which I did not use. After getting onto the sidewalk I do not recall ever seeing any steps so I believe the area is wheelchair accessible, the only issue would be the height of the counter at all of the trucks so an employee may need to come out of the truck to accept payment and hand over food.

    AAC and Veggie Tempura Rolls
    Nancy B.

Continuing my trend of trying new things at Zocalo Food Park, I had some veggie rolls from Modern Maki today, this being my first time getting food from this vendor. The rolls are fresh and definitely satisfying for about $4 each. I generally prefer the tempura rolls with the rice on the outside, but the ones I ordered where pretty good. I also got a melon flavored Japanese soda and with tip an all, I had an under $20 dinner. Check them out!

Decided to treat myself to some Ramen today. Unfortunately this was the most flavorless underwhelming ramen I've ever tasted. Fool me once. Thank God i happened to order a maki roll as well. The tempura roll was good. I wouldn't bother ordering their ramen ever again.

We came after visiting one of the nearby breweries. We were seated right away at the bar. I had a glass of the Black River sake and my boyfriend tried the Blossom of Peace. His was much sweeter and I was very happy with mine. They weren't served in traditional sake cups, just in regular wine glasses but this was good with me as they were a normal sized wine pour. They had a special for Bluefin Tuna. We shared the Nigiri trio by cutting each piece in half. My favorites were the two fattier cuts ( otoro, and chutoro ) I remember at this point we wished we had ordered another appetizer since the restaurant was busy and our main sushi rolls took a bit of time to arrive. We decided next time we would at least get the edamame in between plates. The rolls we ordered were the Ponzu Jello and Riverwest. The Riverwest description listed a smoky miso mayo which I did not notice a different from regular flavored mayo on a roll. The Ponzu Jello was unique and worth trying! The rolls were fat and very filling so we did not need to order more than two! I think we both agreed that the Riverwest roll was our favorite of the two. After that we noticed there was a special for some premium sake, so we ordered the G Joy. Very delicious, easy to drink and a perfect size to share. I will add this restaurant to my places to visit again!

The reason I speak to the number of adults is because they were a bit inappropriate: they were very loud and I felt so bad because I have no doubt the group I was with disrupted the experience of other diners. I'm not a prude but even I was slightly embarrassed at times (I didn't know the group well and didn't anticipate the noise/volume). ANYWAY, I bring all that up because our server tolerated us and I was very grateful for him. Aside from being kind, he was very knowledgeable about trying/pairing items and making suggestions for us. The drinks were beautiful and the food was bright--fresh and flavorful. Bathrooms were spotless. I am looking forward to coming back on my own ;)

Definitely perfect for a date night or if you're wanting nice dinner with friends. I got their One Night in Bangkok cocktail which was presented with an aromatic lemongrass cloud. I also got their Chicken Ka Phrao which was quite nice. My friends also highly enjoyed all of the dishes they tried. Overall it is quite a nice restaurant and I will visit again to try their other items.

We were told it gets busy for dinner right away and with no reservations we decided to go right at dinner opening time. Multiple people greeted us and then thanked us on the way out. All of their sushi options sounded delicious. I got the Very Crunchy. It was served with a fun presentation over dried ice. The sushi itself tasted amazing, even though sushi isn't my favorite. I got the Pad Thai for an entree and I honestly think it's some of the best Pad Thai I've had in a while in Milwaukee. The sauce to noodle ratio was spot on and the flavor was perfect with the right amount of spice. Portions were great as well. Overall, definitely make sure to stop by!
