And to top it off the whole buffet looked gorgeous! He even came to the rescue when we realized the we had neglected to bring a cooler for the week, so he lent us his giant Yeti cooler for the entire week! What a class act from this caterer! In this format it was a little hard to eat (I ended up scraping the chicken out of the bread to eat it that way), and not satisfying as a sandwich the fried eggplant, roasted peppers, sauteed spinach, tomatoes & mozzarella - 5*/5, generous slices of lightly breaded fried eggplant topped with the other items for a "meaty" sandwich, very delicious! For dinner we had the halibut with braised leeks and ratatouille over polenta, it was amazing! I'm not sure if I can recreate this at home but the combination of the perfectly prepared halibut over the creamy polenta accented by slices of the leek, topped with what I could have believed was the typical topping for eggplant or chicken parmigiana (maybe that would be easier than making ratatouille?) - sumptuous!
