It's just a theory, though. Throughout the years since I have been back in this small dusty town, I have seen this big reddish trailer set up at various events. The most recent place I had their barbeque was at a karate event. It's good BBQ, however, I prefer my brisket to be more on the tender and smokey side, though. Their brisket is on the mild smokey, but it lacked that juicy and tenderness I craved. (It's probably because we got to the trailer towards the end of the event.) I thought my small brisket sandwich was going to come with at least a cup of bbq sauce plus a scoop of potato salad and beans, but I only got pickles and sliced onions. Lol. That's a bit pricey for $10. My daughter had brisket nachos that came with lots of melted cheese, some diced red onions, and sour cream drizzled over it. She shared with me because I was still quite hungry. The employees were friendly and welcoming at the window. It sure does take a while longer than I anticipated to get orders, though. THE GRUB There was complimentary chips and salsa. Not very spicy salsa, but well-blended and flavorful. I opted to start the meal off with a Carta Blanca cerveza mainly because I'd never tried it. It was alright. The alambre taco plate ($13). You can request flour tortillas for $1 extra, however, this dish is comprised of 4 small corn tortillas with a layer of "top sirloin with red peppers, green peppers, onions, and cheese. I was asked if I wanted beans and rice with it. I didn't understand the question. Isn't that standard protocol? I really enjoyed the tray of three salsas that they brought out with our food. We walked inside and 50 million eyeballs all looked our way. We stood there not knowing if we had to sit ourselves or wait for the server. It was super busy and hot inside, and almost all the tables were taken. We quickly looked at the menu and knew we wanted tacos. The selection of meats is quite small and there is not a lot to pick from. I went with the steak tacos with everything on top and the hubs had the alambre tacos. He also ordered a michelada. Chips and salsa were brought out right away. The salsa was muy caliente. Our food didn't take too long and both our dishes came with rice and beans. My steak tacos were dry AF. The meat was bland and it had a lot of fatty pieces. It was topped off with some chopped cucumbers and cilantro but nope it still had no flavor. The hubs also was not impressed and he said that his tacos weren't it. (That means it's a no) The michelada was good though! It was yummy! The rice and beans were also pretty good! While the owners were extremely nice and generous & even gave us a quick tour of their snazzy trailer, their pizzas are good. Not great. Yet another case of "I wanted to love it, but..." Lol. My friend who made the orders, was ecstatic about the "Da Vinci" which entails "spinach, artichokes, tomatoes, mozzarella cheese & garlic olive oil." It was alright. I prefered "the 505" which combines "sausage, Hatch green chiles, mozzarella cheese and red sauce." It was more savory and delicious than even the plain cheese, pepperoni, and the slice of "3 Little Pigs" (pepperoni, Canadian bacon, sausage, mozzarella cheese & red sauce) that I tried. These are very thin pizzas. The edges were much too burned for me most of the time. This is very typical of wood-fired pizzas in my opinion. Even the culinary hub of the Greater Los Angeles area where I lived for 10 years. Also, their dough itself was not very flavorful or enjoyable to eat, so I dug into my brother and sister-in-law's kitchen to create my own dipping sauce. Maybe they've created some since I tried them last summer, but I haven't heard about it. Served with beans and potatoes." Your choice of two corn or flour tortillas. The flour tortillas were homemade. It took about 10 minutes for it to be prepped. I had one more errand to run before I got back to work, but it was still all piping hot at that point. I only wish that next time I get some salsa if possible to put on top of my beans and potatoes.
