Wow truly incredible and so authentic like eating at your abuelas . . Sylvia (chef) and Gisele were so sweet. Take a chance to speak with them if you can the food is made with love. You don't get just chips and salsa when you come in you get a free serving of frijoles that is too die for with the chips and salsa. I've eaten here a couple times and always love the food. This time in particular I had the pasole and it was just too damn good. . . I had to leave a review. It was so well deserved. Give them a shot I know you will not be disappointed.

Stopped here after horseback riding in Conifer. Food was some of the BEST Mexican I have ever had, portions were super generous and excellent waitstaff!! Highly recommend the stop if you're driving thru!!!

The definition of a delicious mom & pop shop! Don't let this restaurant being attached to a gas station fool you (it almost got me) because this is some of the most delicious & authentic mexican food you'll have in Denver! I went with a group of 8 friends on NYE for dinner & didn't have to wait at all! Being from California, I've eaten at plenty of authentic mexican food restaurants and this had some of the best guacamole i've ever had! I wasn't a huge fan of the Mole sauce on my enchiladas, but it was still pretty tasty! Highly recommend getting some queso as an appetizer & using left overs on top of your dish! The portions sizes are large! You will leave very full & satisfied and have left over for the next day!

Popular spot. Glad we got there early for lunch. (11:30am) It got crowded right after. Friendly service. Looks like they're expanding maybe. Construction happening while we were there Thanksgiving week.

This is everything it should be for a family run mexican joint at a gas station. All the negatives quickly turn to positives. Giselle works her tail off here. Hostess, waitress bartender...whatever needs to be done. This place is busy everytime we go here. Sit in a booth it's part of the experience when someone behind you sits in theirs....quite the ride. Don't be afraid of the prices. The portions are huge. A lot of people share one entree....think round turkey platter for a plate.

This place is the best. Brought the whole family. Ensalata with Shrimp, Enchiladas, mole, chili relleno, chimichanga, and for you Regular Show fans - get the Mexican Shrimp cocktail (aka The Mississippi Queen) it is so good!

Seafood enchilada.

Great tasty food, PLEASANT FRIENDLY STAFF, clean all around. Authentic and the real deal!

I cannot tell you how many times we have flown by Mexico Lindo on 285 and said, "We should stop sometime but let's get closer to home to eat." I now say, "Why, did we not stop sooner." We arrived close to 2:00 and ordered from the lunch menu which included Chicken Mole (I ordered it). The husband ordered a pork burrito with red and green chili. I was pleasantly surprised when they brought out chips and salsa along with a small platter of bean/beef/queso dip. It is the small things that earn stars from me. Our meal arrived quickly by a smiling waitress, and it looked delicious. My mole was very good and served with rice and beans and handmade tortillas. The tortillias were a bit thick but nicely held together as a taco and the husband was pleased as well. I brought home leftovers for my dinner and the mole was even better. Mexico Lindo is easy on and off 285 if you are heading into Denver. It is next to a gas station but cute on the inside (Mexican carved wood furniture in bright colors.)

Best Mole in Colorado. I've been looking for 7 years and finally found it on the way home from the mountains! So good. Everything they served was truly amazing. Don't make the mistake of passing this place just because it's attached to a gas station. Mole Chicken Enchiladas. Service was as friendly as anyplace ever. We felt like we were on a trip to mexico. Perfect ambiance.

The most authentic Mexican food in the foothills. Family owned and operated, no one can beat their recipes. Great happy hour specials too!

That being said, these are my observations: I just read someone's review and I quote "..The food has been phenomenal.." I beg to differ. I qualify myself for this review by mentioning I am a graduate of the Colorado Chefs De Cuisine (an Apprentice Culinarian-Certified Cook) but now a professional cook with 20 years creating in kitchens around Denver. I owned a restaurant for 7 years and I grew up in my grandparents kitchen learning to make red and green chili among other food items so from Rellenos to beans to tortillas to butchering and preparing every kind of meat in ovens,on the stove top and in pits..all authentic New Mexican cuisine so.. I have been there and have done that...I have issues with Mexican Restaurants. Almost every single restaurant uses a pre-made green chili that is lifeless and horrible so I asked the very serious waiter where they get their green chili from and he sternly stated "we make our own here.." But besides the fact the waiter walked around life as serious as a WIldebeest, I broke my mandatory rule: If there aren't any Mexicans in there then leave, the place is no good but we were very hungry...the store was filled with older gringos who have no idea what Mexican food tastes like. I hated everything about the food and the personality of the staff was just ok. One thing that disturbed me was the green chili the waiter beamed about. It looked like beef gravy and the taste was very similar...in fact, if it hadn't been borderline over salty it would've not had much taste...I hope the owner of this establishment can take my words in stride and contemplate an upgrade..

We ordered tacos - al pastor, carne asada, chicken, shredded beef, Adobada (pork without pineapple) and smothered marinated pork Burrito. Loved all the dishes and the clear winner for us was the Adobada meat (marinated pork). Every single bite was flavorful, juicy and tender. The seasoning was just right without it being overpowering. Both the Tacos and the gooey Burrito were filled with lots of meat - honestly, it was simple and satisfying without it being too greasy. Pricing was very affordable for the food portions and the food quality you get here. This is definitely an authentic spot you want to visit whenever you are in the mood to eat Mexican food - simple high quality food.
