Overall, I had a good experience dining at Mendokoro. It's some of the best ramen I've had in a while. They clearly know what they're doing in that regard. They're pretty good about filling your water glass and they gave a bib to avoid ramen splashing on your shirt/pants. However, some of the other aspects of the restaurant were less pleasant. Three times I was asked to be upsold to add gyoza to my meal, even after paying (which one does at the front desk upon entering). This type of upsell tactic (3x) just felt a bit tacky and used car salesman-esque. The ramen comes in a piping hot dish - one can easily burn oneself touching it, and there was no warning about this. Lastly, the guest WiFi doesn't work. I hope they can improve on some of these peripheral experiences, because the ramen speaks for itself! read more

TLDR: The greatest tonkotsu ramen of all time. One of the greatest gyozas to be made. The greatest service water of all time. Eating this more than once a quarter would probably be unhealthy. Knowing that, I think I'd still risk it. Shoyu ramen: It's ethereal food. This bowl of ramen may not be delicate and it's definitely not light. It is however almost too perfect for this world. The broth is life changing, the chashu is tender like it was cooked for 12 hours, the noodles are amazing, and the additives in the bowl pop out enough to be noticed but never outshine the main components. Gyoza: It may just be the best gyoza I've ever had. It's a perfect mix of pork and veggies. The gyoza skin is thin, the sauce is a good touch of tang, and I just love everything in the plate. Water: I know. Who in their right mind will review the water of the restaurant? Me, because I've never had water that I would call "amazing". I don't care if your bottled water is from the French Alps. This one easily beats it and I don't have to pay extra for it. Service: The place has a very barebones setup. Cashier takes your order. You wait for your number to be called. You're ushered to a seat. Kitchen staff prepare and give you your food. It's a straightforward and easy interaction. I hate waiting for food. Period. But daaannnnngg that bowl of Tantanmen was so delicious. If I lived in the area, I would definitely figure out when I didn't have to wait so long for such a delicious bowl of silky pork broth and noodles were chewy. I ordered a side of chashu which was tender and salted just right, aji tamago, and gyoza. I brought 2 people that weren't used to that type of ramen, and I'll say it... I looked that place up and selfishly chose it because it looked so good! I just had to try it no matter what. In the past couple weeks I've eaten here at least 5 times and we'll, this place makes the best ramen in the world in my opinion. You heard that right. Literally, the best ramen in the world is served here. Period. My personal favorite is the Shio with extra char siu, followed closely by the Shoyu ramen. The broth is a perfectly balanced, thick and creamy miracle of heaven bestowed upon us on Earth. The noodles are cooked to perfection and are of the exactly length, girthiness, and texture that lies somewhere between chewy and melt in your mouth (if that is even possible). And speaking of melt in your mouth, the char siu is just that and more. With a slight hint of carmelization, and a fall of the bone type of consistency, you must order the extra char siu (3 more pieces for 120 pesos) lest you regret it after inhaling your single piece unwittingly. I am a huge fan of Ramen even though I don't eat it often. The place is small and cozy. You're sitting on stools next to people. They cook the food pretty fast which is great! The broth is kinda creamy and very flavorful. Ramen comes with veggies, a slice of meat (pork) and an egg. The bowl it comes in is pretty big. If one slice of meat isn't enough you can order a side of pork slices. The pork was tender and juicy which I was very pleased with. But here is why I can only give the place 3 stars. The place opens around 10:30. I got there at like 11. Because it's popular and seating is very limited, I had to wait about an hour. The place is small too so most of the waiting took place outside in the heat (not great). The food was good but I don't think anything is really worth an hour wait. It's easy to make comparisons to the competition--Nagi, Ippudo, Santouka, and even options a price bracket down like Kuroda, but the presentation, taste, and consistency put Mendokoro one step above the rest. If you come here during normal lunch or dinner hours, prepare to wait. The dining room itself is centered around their show kitchen and there are probably only about 20-odd seats available. The dining room itself is pretty sleekly appointed with lots of warm Instagram-friendly lighting and nice wood textures. You pay ahead of time and then patiently wait for your turn. As with most other ramen places in this price segment, there is absolutely no take-out allowed, probably so cunning fans can't reverse-engineer their broth. Service here is amazing. The waitstaff and cooks are all super courteous and high-energy, seemingly unphased by the never-ending throngs of hungry fans. My water never dipped below half-full for the entirety of my meal, a considerable achievement considering how busy it is here. Now for the food. I recommend getting the gyoza to accompany the ramen. It's one of the best ones I've had outside of Japan!! It's pillowy-soft on the inside yet still with that perfect crisp on the outside. The flavors are delicate--not too salty, not too scallion-y. The umami is amazing. The ramen is amaaaaazing!! Anything on the menu is sure to please but my favorites boil down to the shio ramen and the tantanmen. While I feel as though the tantanmen could benefit from more meat, the broth and noodles are excellently done. The fact that the food is prepared in front of you is also a huge benefit. I do leave you with one warning though--this is not a ramen place to lounge around and make tambay with your barkada. You do feel a sense of urgency to get your ramen, enjoy it, and go since tons of people are waiting and the service is so speedy. Despite having opened in 204, this was the first time we actually got to try the place out, due to location and the difficulty of finding a parking spot in the area. Nevertheless, I've heard of multiple accounts of how extraordinary the ramens here are, and indeed the quality and service have both lived up to expectations. This restaurant is definitely under the same company as Yushoken in Alabang. Yushoken is a 5-star for me so when we tried this place it paled in comparison for a number of reasons. First, for whatever reason the Tantanmen I ordered isn't as appetizing as the ones in Yushoken. It tasted almost the same but we all know the presentation is always a factor. Secondly, the menu and seating is very limited. You sit around the small kitchen itself. Pretty good experience but you will feel rushed during busy hours as the pressure of finishing ASAP is there, especially when you see other customers staring at you and waiting for you to stand up. Admit it or not, if you are mindful of others it's not contributing to a great dining experience. Last of all, when we were there, the restroom is unavailable because it is under renovation. Easily the best ramen place I've ever been to and is usually the first place I eat when I arrive in Manila. A long, hot, but manageable walk away from Greenbelt, this place does not disappoint. In fact, I once ate here 8 straight days while on a 14 day vacation in the Philippines. Credit card is readily accepted which is a huge plus (Chase Reserve 3x's points at restaurants, baby!). Pro-Tip: Avoid during weekday lunch and dinner rush hour... all the office folks flock here in groups during or after work. Ask the cashier about the "not so secret menu" and you will not be disappointed. I'm taking away 1 star because I noticed during my last trip that the ramen broth is consistently less hot when being served when compared to the past. I overheard someone mention that this is due to complaints from patrons complaining that the broth was too hot at service... while I'm mindful that a lot of people from this region of the world are sensitive to temperature extremes (no microwaves, water heaters, etc.), the restaurant shouldn't have changed the serving temperature of the food. Long time patrons can recall that served once needed extra tissues or oven mitts to serve the ramen because it was hot, but now can serve the ramen bare-handed because the serving temperature can no longer be described as piping-hot. As far as ramen goes, this place is legit. The shoyu tonkotsu broth had some unusual spices and textures and the pork was flavorful but cooked on a cast iron bacon pan for grill marks. My girlfriend had the tantanmen tonkotsu broth with ground pork. It was the most unique broth I've tried as it was smooth, creamy, and spicy truly feeling like a party in your mouth. You have to order the eggs separately, which we didn't know at the time we ordered, so we didn't get to sample them--though they looked good. The noodles didn't have quite the slurpability of the best ramen we've had but were otherwise decent tasting. You order and pay when you walk in and service is very speedy and courteous. Actually, I must tell you that I saw the day this restaurant opened at the quiet Soliman Street here in Salcedo Village, just close to my place. It started out of the blue and was already a hype! Once upon a time, while walking towards La Creperie (another great restaurants just a few steps away), I saw this new Japanese restaurant and got curious about it. There was a big line in front of it. I took a look at the inside and noticed there were no tables. However, there was a big round counter with an open kitchen on the inside, so the customers could see the chef preparing the food just in front of them. Live performance. The round counter just made me think about those King Arthur and the Knights of the Round Table's tales. But...well...medieval times and Japanese food together? I must say it sounded really weird for a foreigner who comes from faraway Brazil and has her début in Asia here in the Philippines. By the way, everything sounded weird: the chefs yelling something I couldn't understand, people eating silently...it really looked like a mafia meeting or like a ritual I hadn't been introduced to. Despite the strangeness, mama taught me that courage is a virtue. So I took a deep breath and entered the restaurant. I was nervous because I didn't know how it worked, but at the end I had a positive surprise. There's a big board where they explain the Mendokoro ramen bar system. Great for newcomers like me. Mendokoro Ramenba's Shoyu Ramen Bowl is one of the two ramen bowls that I could finish through and through, the other Ikkoryu. I am a certified Ramen lover but for some reason, bowl servings in other restaurants is too large for me. I can't finish them and get sad cause I feel like I'm wasting food. With Mendokoro's, I'm not. It's just right. :) Their menu's simple. Shio, Shoyu, Tantanmen, Tsukemen. No fuss whatsoever when you select your ramen. It's easy to identify, you just need to choose from salt, soy sauce, spicy, deconstructed ramen. Yummy too! I recommend it to single diners. Huzzah!
