The broth is light, cooked with a blend of asari clams and chicken, with a hint of truffle oil while the Char Siu is thin and non-fatty. Though not a "wow" experience, I do believe that Tsuta is currently one of the top ramen shops in Hong Kong. However, its portion size is towards the smaller end, and I would likely order the bigger sizes if I do visit for a regular meal in the future.

Bingsu is Korean milky shaved ice and although none here are comparable to the best Bingsu which is Homilpat in Seoul, this place comes pretty close! The Bingsu here is similar in texture to Hanbing in Harbour Plaza, but the sizes are bigger and and you get much more for the same price! The texture of the ice is what determines a good Bingsu and the shaved ice here is pretty soft, although not the snow like fluffy texture in Korea. You have to mix the ice as well as the ice is not made from milk and they just use condensed milk on top so if you don't mix it only the top will have flavor and the bottom will just taste like flavorless ice aka frozen water. My favorite bingsu flavors here are the mango and green tea. The green tea comes with a scoop of matcha ice cream and some red bean. The mango comes with a scoop of mango sorbet and mango sauce which kinda overpowers the natural mango flavor with an artificial one. The melon one is okay too and comes in a carved out honeydew and topped with a melon bar Popsicle. The food here looks pretty good as well and I will have to try it sometime!

Blue Lime Lemon Rita (88 HKD): really quite good - a sweet, tropical flavoured slush with a Corona beer stuck in the slush by a clamp. Presentation was very cool. Their sweets/desserts and drinks are definitely their unique dishes. There was this Melona Shaved Ice that looked absolutely scrumptious, as well as a variety of other shaved ices. Like most ramen shops you have a few choices to make when ordering your ramen: the hardness of the noodles, green onion or no green onion, the flavouring of the soup. The base ramen is 88 hkd which is not too expensive and in line with Hk ramen shops. You will likely add additional items like the egg or more meat which will run up the price. They only provide one piece of pork so I would add on the extra pork. I ordered the ramen and followed the recommended soup base and noodle texture. The broth is tasty and has a unique taste to it. Although, the soup is a bit on the salty side. Hong Kong folks like to drink the soup and the guys around me drank the whole bowl. I would have a hard time doing this and wouldn't suggest it. The noodles were cooked nicely. They had a nice bite to them and were supple and soft at the same time. As mentioned earlier they only provide one piece of pork. That pork however is very tender. It is not heavily flavoured but the meat will melt in your mouth. I really enjoyed the char siu rice. It is not a char siu in the classical Hong Kong style, but rather is a soy braised pork. The rice is topped with crispy shrimp bits which add texture and crunch to the dish. This is dish is a really good deal at 45 hkd. If you have a small appetite this would probably be enough for a light lunch.
