The butchers will give you ideas on how to prepare meats. For example, the last time I stepped in they had a cut called a cowboy cut. I had never heard of it. At $17 a pound, I wasn't taking any risks so I asked for advice. my daughter and I loved the meaty flavor with a respectable chew. VERY flavorful. Caution: you will not be able to resist all the fresh organic grass fed and finished beef. You will leave much poorer than when you arrived but you will eat really well. surprise of my visit: fresh wild-caught halibut . It was the best HALIBUT I have ever consumed. Absolutely gorgeous to look at and beautiful to prepare. Super expensive so make it a treat for that special night in. Grab a loaf of crusty Signal Fire bread woodfired, sourdough stone, ground local grains from East Mountain Levain. This bread will stand up to the cowboy steak. read more

Before I moved this was the only place I would buy my meat and specialty ingredients from. I got to know the staff really well and not only do they know their meat, but you can rely on them to get the best, from the best people with the best practices. They've expanded since and for good reason- people can't get enough of their excellent service, products and the people. The space itself is just cooooool, you'll want to stay and hang for a minute. Froxen rntries mac & kale is good, minestrone is excellent too, But I ordered fresh turkey for the holiday, it was an amazing experience after years of decent organiclly raised birds. I wasn't looking for meats on this trip but from talking to the butcher I can see why it gets great reviews for their meat. What a treat to have this wonderful meat market so close! I stopped in when I heard they were now carrying CBD oil and was impressed by the variety of products that they carry! In addition to the oil they have gummies, salves and I am hooked on the CBD sea salt caramels! I use CBD for everything now. It had an amazing affect on a painful frozen shoulder for me and I recommend it to anyone who has issues! But back to Marbled, they have a daily menu of delicious prepared foods that are mouth watering! I can't believe it took me so long to try them but I am definitely a customer now! Service is excellent by the way. Everyone who works there is so helpful and friendly! They made a lot of great suggestions and I took home a lot of great stuff! Best Lunch I've ever had, NO JOKE! Just polished off a Columbia St. - rare roast beef dipped in au jus, fried eggplant, fresh mozzarella, roasted red peppers and knot sauce on stirato roll. I've eaten sandwiches all over NYC, Westchester and Putnam County and I've never been more satisfied. The perfect ratio of bread, juicy roast beef and toppings/sauces. My first experience at Marbled was a transcendent pork chop. Mind blown over how deliciously moist and flavorful a pork chop can be. The chicken thighs are addicting. Really appreciate their responsible efforts being a whole animal butcher and the locally sourced meats are simply unparalleled for many miles. This place is really great, the food is wonderfully butchered and carefully tendered. The space is immaculately clean. My only complaint is that, for the number of times I go in there, which is plenty, and the money I spend there, which is abundant, it would feel good and make it a well-rounded experience if the owner would say "hello," "thank you" or "goodbye." Something would be better than being ignored each and every time: no eye contact, no sincere thank you, and blatant rejection of jovial small-talk or any conversation. I understand social anxiety is very possible here, however it feels ungracious and almost makes me want to take my business, and my multiple guests I bring in, elsewhere, however I can't bring myself to do so because the food and options are too good. read more

maybe i caught them on an off day but there wasnt much stock and the worker who helped wasnt very friendly. very small store and maybe i missed something but there wasnt much in the cases to look at and choose from. if i did miss something the worker for sure didnt make it seem like he wanted to help by saying anything. when we came in they were working and he came up asked what we needed and then proceeded to stand there staring at us like we were wasting his time by not being full ready to go at that very moment. i was really looking forward to going based on all the reviews but i dont see myself going back there. if you can drive a little farther id go to barbs butchery in beacon everytime. read more

I have been buying Marbled meats and prepared dishes since they opened their doors. ALL of their products are top notch and very high quality. I lived in Manhattan most of my adult life before moving up here 7 years ago. Marbled's quality is equal to or better than the best meat shops in the city, without any qualifications. Their prepared foods are incredibly delicious as well; better than meals I've had in some of the best restaurants around here. They use superior natural and organic ingredients, and the chefs are sensational with blending flavors with the dishes they create. My hat is off to Chris and Lisa for creating and maintaining this incredible shop; and to their staff who are extremely knowledgeable, helpful and personable. Our go to place. They always have a rocking selection of sandwiches, usually including a veggie option (I love the rainbow roll!) and a salad. Their meat is really high quality and super tasty, and you get A LOT of food for the price, everything is very filling. Their prepared foods are a lifesaver for us. We cook a few times a week but we also work a lot and it's so nice to have something fresh, healthy and delicious waiting in the fridge or the freezer. Their pot pies and their sausages (frozen or fresh) are often a stand by for busy nights. And the burnt end baked beans are addictive. And of course, you can always get a good cut of meat AND their knowledgeable butchers will help you figure out what works best for your meal. Really you can't go wrong here!!
