Also (a crucial point), they are very good at creating flavour combos that work well. The quality of fish (which is my main judging criterion for sushi) is excellent. I always order the sashimi with ponzu sauce. Although not the best in town, the maki rolls are well-made - it must be said that they often are somewhat too large, making it difficult to eat in one bite. The sushi is also always beautifully presented, which I think is an important point when eating sushi at a restaurant (as opposed to having take-away). The staff usually consists of two waiters, where one is extremely friendly, and the other is much less so. This has become something of an amusement, and doesnt bother me too much.
