Still hungry after the Yelp event at Pop Up Brixton I found myself fascinated at the sight of a fresh pizza being made from near the beginning to end, right in front of your very eyes. In a little stall converted from a shipping container, there was a proper wood pizza oven in there too.
Staff were pretty laid back and cool. We ordered a pizza bianca of artichokes and was surprised at how incredibly quick it took to deliver from a bit of fresh dough, to a full on pizza in front of us. 4 minutes to be exact!

The cheese came generously, mild and stretchy like how I like it. Beautifully buttery tender artichokes scattered around seasoned over with garlic oil and rosemary. There the dough was light and spongy, a great texture and giving an excellently bite. But there was one problem, it was really burnt in some places, dark charrings that sent a miserable bitterness across the pizza. I don't know if it is possible to always guarantee a non burnt base as it seems to take a high level to control especially when you're playing with real fire.. But with a little bit of work peeling those burnt bits off than you will have one fantastic pizza, a fresh and hot.
