Told them we added two more people on and he recommended how much and cut it. I asked him to slice off the bone and butcher twine it back together. They had told me there was $5 charge when I preordered on the phone and I told him that was fine. When I told the guy today that I was smoking it and would cut off the twine, season the part where the bone was and twine back together, he told me he would net it after cutting the bone off and didn't charged me. This is choice meat but it is as close to prime as can be and their price was cheaper than other butchers I checked with.

The interior was impressively sanitized and clean. It took them a few minutes to find our order paperwork, but once they did, we quickly backed out truck up to one of their freezers. Two guys happily chatted us up while they quickly loaded 400lbs of beef into boxes they provided, then organized those boxes in the truck bed. The whole experience took less than 20mn. The Mister tried to tip the two guys as we left, but they turned us down and told us they were just doing their job. When we got home, we found all the meat was well sealed and labeled. We particularly appreciated that the meat was packed in small servings, which should cut down on waste. We were very impressed, and will be back after we eat our way through the first 400lbs of meat.
