I also got the Mexican street corn cup with was topped with mayo, cotija cheese, lime, Valentina sauce, and chili powder. Perfect citrus and spice. And lastly I got the beans, and they weren't stingy with the cheese! I got the salsa roja, which was very spicy and flavorful. They come in these little packets so at first you think they are purchased or outsourced, but if you go to the food truck's instagram page you can see they make it on site and then package it themselves! Very sophisticated high level operation food truck! My colleague got the 12 inch quesadilla de chorizo. It was a huge portion and very cheesy, though he did say his chorizo was a little dry. He did enjoy it. We also got a few of their frozen smoothie drinks. I got the pineapple, he got the mango, and I also tried their Jamaican hibiscus team. Each drink was super fresh, fruity, and a perfect blend of savory and sweet.
