I tried to go to Let's Pho exactly one year ago but it was closed for the day. Now back and it happens to be the first anniversary of opening! This explains the gold and black balloons being put up. The interior is contemporary Vietnamese with Việt motifs. Ambiance is casual and comfortable, which suited us. Trying a Vietnamese restaurant in Puerto Vallarta seemed dicey, but we were craving Asian noodles for lunch. We came with low expectations and were blown away! The Phô Beef broth was probably the best I've had in years. Clear, golden brown, aromatic and tasty with the right amount of spices and salt. It's amazing they achieved the flavors and also indicate an MSG free kitchen! The beef was delicious even though it probably wasn't brisket that I ordered. We had adequate fixings and lots of cilantro as requested. Excellent phô and value for the money. We finished the large bowls and jokingly licked the bowls. It's definitely the must-try signature dish. We were also impressed with the Spring Rolls which tasted freshly made and stuffed with shrimp. Our only disappointment were the Pork Dumplings that came out completely over-steamed and falling apart. Our waiter was nice and attentive. Owner Charlie Huynh came by several times. He's super friendly and we enjoyed chatting with him and taking photos. He was excited about his one year anniversary party and also we got free dessert. The Coconut Flan was a perfect finish. We wish Charlie good fortune in the future, and will make a point to come back on our next PV trip. Our Asian craving was definitely satisfied! read more

Okay, real talk... on my next trip down to PV in April I'm going to go back and re-evaluate this place... I ordered wrong. Mia culpa. I was craving wings, so decided to order the wings here, and they had three options... garlic butter, tamarind, or house fish sauce. I ordered the tamarind and they were bit odd. The sauce was the consistency of jam, and sort of just clumped onto the wings. I think that if they thinned the sauce substantially and then tossed them well to coat them evenly, they would have been great. It was just odd, like 1/4 of the wing was covered with a dollop and the rest had no sauce. Kind of seemed like someone was in a big hurry. I also saw the kimchi fries and was intrigued to try them. The fries themselves were standard, the chicken was okay, the fried egg on top a nice and appropriate touch... but the teriyaki sauce didn't work, at all. It was super basic, made me think "La Choy" brand from a standard discount supermarket... They really need to lean into this dish, because when it's done right it's amazing. Not Teriyaki but rather Gochujang Sauce: a thick and spicy-sweet sauce made from red pepper flakes, rice, fermented soybeans, and salt. It adds excellent flavor and is a key ingredient in Korean cooking. Then not Sriracha but Spicy Mayo, made with a mixture of shichimi spice and chili garlic sauce for ALL the flavor. The positive reviews, and there are a lot... speak of the pho, of the vermicelli dishes, of the rice dishes, and of course that makes sense as it's a Vietnamese restaurant. I'll go back in April, actually order the right things, and revisit this rating. Would love to love it and upgrade my score, but yeare the wings and the kimchi fries, as they were served last week... ain't it, bro. read more

Curiosity got the best of me and I decided to see how authentic this pho would be compared to the pho I've had in SoCal. I ordered the spring rolls with shrimp and they were really good...only complaint is that they went heavy on the noodles and it was a huge roll. Flavor was there and the peanut sauce was good. I also ordered the beef pho. The broth was lacking something...but I couldn't quite put my finger on it. It was good considering I was having pho in Puerto Vallarta. Noodles were a completely different texture (imagine rice noodles but flat like fettuccine noodles) they weren't bad but I was something I personally was not used to. All the usual fixings were presented (basil, cilantro, sliced fresh jalapeño, limes, & bean spouts) Service was extremely attentive and friendly. The other customers were telling me that this was almost like back in the states and it was delicious. I could tell they missed pho from Canada & the US . It was casual and relaxed. A full bar and all the staff spoke great English. I recommend this only if you need to have pho...or have a craving. read more

First off, the play on words with the name is great! The court of public opinion locally has been very polarized on this new Vietnamese restaurant, but I like to try things for myself to form my own. I dined with a friend at one of the weirdly set up tables - we had to sit next to each other which is kind of awkward for conversation. The service is great. The menu has a decent selection. I wanted something light and asked the server to help with my choice. He suggested something with rice noodles, chicken and veggies with oyster sauce and eggrolls on the side. It was a really large portion. I actually couldn't even finish it. The eggrolls were tasty, the rice noodles perfectly cooked, and juicy chicken. I did have to ask for more sauce because it was all fairly bland, but the sauce helped. I would definitely like to try other options on the menu. read more

With puerto vallarta offering pretty much the same type of food almost everywhere. Let's pho was a refreshing find. The food was exceptionally well done. The spring rolls with shrimp and peanut sauce were delicate and tasty, and the fried rice with chicken was not oily , very flavorful. The pho soup was excellent. The broth was brothing. The meat looked as if it had been pulled from the bone. The noodles seemed as if they had just been made from scratch. Will definitely go back when I visit. The chef was so nice. My girlfriend and I walked past Let's Pho a couple days ago and the smell told us we had to try it. We walked back today and were warmly welcomed by our amazing server (i wish i remembered his name). The drinks were done so well, couldn't taste any alcohol but was feeling it after only 2 margaritas. The FOOD ... absolutely sensational. I've had lots of Pho but only few compare to this place. The broth had such depth and such a comforting flavor. Our lemongrass chicken was also made to perfection- such an amazing balance of flavors dancing in my mouth. We were in and out within an hour but didn't feel rushed. The restaurant was very clean and a very beautiful place to enjoy a meal. I would most certainly recommend Let's Pho to anyone looking for their next amazing meal in Puerto Vallarta. It's also very reasonably priced and the portions were spot on. This is a VERY generous 4 star given, but because it is a rare find (Vietnamese food in PV Mexico). To start, we had spring roll, very disappointed that it only comes with noodles, lettuce and shrimps and that was it. When suggested to the host that spring rolls should at the very least have mint (mine not only made with mint, but cilantro, chives, in addition to pork) the host said they only added mint upon request! What?? That's like saying ask for oregano in spaghetti sauce otherwise we don't put it in. So a HUGE minus here. My travel companion ordered the pho, and I was really curious to try, since it got mix reviews. Friends, not sure where they got the recipe from, but it lack flavors. What do I mean? Tasted almost like water with a little salt. Ok, maybe I can taste a little bit of onion in there but that's about it, not a hint of pho aroma (and those of you know pho, you know what I am talking about). The noodles were from hydrated dry package and not the fresh noodles. It wasn't all bad, tho, and I will gladly give credit where it's due, especially to a place trying to do something different. I bravely try something that I have not ordered at a Vietnamese restaurant: beef fajitas (ok, so it's because they normally don't offer it). I was pleasantly surprised! It was delectably seasoned with lemongrass, comes with onion and a perfectly cooked sunny side up egg, and bread on the side. If the bread was a baguette, it would have been a 10/10. I also had a piña colada sin alcohol (basically a smoothie) and that was yummy. My travel buddy liked his Vietnamese coffee which was just OK to me because I didn't taste the chicory flavor, just condensed milk. I think it's important to support diversity and I would go back but it's far from great Vietnamese food. To me I didn't taste any fish sauce, a key ingredient in Vietnamese cooking, in any of the dishes that I tasted today and this is possible reason for the food lacking its signature flavor. And while I am at it, kimchi is not part of Vietnamese good realm, even though I do love it. They do have outdoor seating and we enjoyed the temperate April weather across from the beautiful "mosaic" park being serenaded by one of the street musician. read more

It's so nice to find a Vietnamese restaurant in PV! The wait staff are very friendly and attentive. They have a pretty extensive menu from fish sauce chicken wings to bo ne (sizzling beef on a hot plate). They serve alcohol, mixed drinks, and fresh fruit smoothies. I like the indoor/outdoor dining option too. They take U.S. dollars and credit cards, which is great. Another good thing is that after you eat, you can stroll around the neighborhood since there are many shops nearby. read more

(Loud, smoking) My wife had a vermicelli bowl with chicken while I had Pho with beef. And the carrot cake for dessert was great. We will be back again when we can. I am excited that my fave vacay spot got authentic Vietnamese, my fave food btw! The food is definitely the star but don't sleep on the cocktails. Especially the margaritas. I was surprised too but when I found out the Vietnamese chef is actually from Saigon, Vietnam I had to go check it out. The food is even better than some restaurants even in the states. First off, I've been lucky enough to live in places where the Vietnamese cuisine is strong. Also, I've only been to this place 2x (1st time: vietnamese coffee's and spring rolls; 2nd time: veggie bun). Both times I've noticed the usual accompanying sauces were watered down. For the spring rolls, the peanut sauce was WEAK, and the only ingredients were tofu and lettuce!?!? (what happened to the mint, basil, carrot, bamboo shoots, etc). For the bun the second time, the fish sauce was hardly funky, and uncharacteristically, I had to use all that was given to even get a hint of that salty, fishy, funky splendor. Also for the bun, the overall size of this simple dish was small (for $210 MEX???), and there were NO AROMATICS GIVEN, which was unlike any Vietnamese I've ever had (thankfully). I had to specifically request basil (no mint or cilantro available??), and one of the 2 veggie spring rolls that came with (I'm vegetarian) had meat. Not a big deal for me, but I'm easy like that. I'm most upset that my Mexican friend, and Vietnamese-food virgin, had to experience this. The beauty of a real Vietanmese bun is it's simple, light ingredients and complex sauces. We regularly visit PV in the winter and this relatively new restaurant is a great change of pace! It's located on a moderately busy street with mostly indoor seating, but some outside tables near the sidewalk - if you've been to PV you know what this arrangement looks like. We sat outside, but the ambience was set up very nicely and the service is prompt and attentive. We had pork spring rolls as an appetizer and pho with beef brisket as the main course. Two spring rolls were large enough to share and the pho came with lots of beef, delicious noodles and lots of toppings. The broth is out of this world. Everything was very fresh and delicious. For dessert we shared the carrot cake the chocolate cake between three of us, the carrot cake was topped with strips of carrot that had been marinated in something delicious. Overall a great experience and I expect that we will return there often. read more

We live full time in PV and are always on the lookout for new restaurants to try. Our experience at Let's Pho was a very pleasant surprise!!! We sat at an outside table and experienced excellent service from the staff. On to the import part...the food!! The signature Pho was excellent....terrific flavors. We also had the pork eggrolls and Fried Shrimp. All were delicious and served hot. We will definitely include this on our favorite restaurants list! We had a very nice dining experience at Let's Pho last night. The food was excellent and very authentic. I have been to many Vietnamese owned restaurants in the United States and I did not know what to expect here in Puerto Vallarta, Mexico, but Let's Pho surprised me in a very good way. The staff were attentive and polite, and the chef who is very nice came out to speak with us. The prices were not expensive and the food was so tasty. I highly recommend this restaurant. On my way back from the beach, there was a small bar and some hockey fans watching the Leafs game so I grabbed a Pacifico and watched too. Between periods I noticed right next door a Vietnamese restaurant and as I love Vietnamese food, and have been a long time fan as over 80 Vietnamese restaurants in the Twin Cities and I also have visited Vietnam. So I called my daughter who was with me and we gave it a try. Had the shrimp spring rolls with great peanut sauce, and she had the rock and roll grilled beef and it was excellent. I had the Vermacelli bowl with grilled pork and it too was one of the best I have ever had. We enjoyed the food so much that in my two week stay, I came back three more times. Had garlic shrimp, beef pho, and I always stuck with the Vermacelli bowl as liked so much. And great margaritas too, on the rocks and most tasty. You might not think PV as a spot for Vietnamese food, but a great optional tasted treat when it was so good. And with the bar next door and as I am a hockey fan, I spent a lot of time in this area. Wait staff was always most friendly and orders came all so timely. One of the top three picks for dining on this trip to PV.
