This was my favorite in Guadalajara. However, many things have changed. The service was excellent from our waiter Victor. The Maitre d Adrian was very willing to listen to suggestions to make it a 5* again. While the food is very good, the experience is no longer what it used to be. In the past, they had a tequila pairing of 8 courses with choices for each. In addition, the Tequila Shrimp used to be flambé table side (the experience is gone) making them succulent, but now it comes to the table plated and a bit dry. Now to review what was really good tonight - the "Quesadilla de la Esquina" - They are 4 delicious fried tortillas with different vegetarian fillings (peppers, mushroom, zucchini, huitlacoche also known as corn mushroom or Mexican truffle). The quesadilla looks like an empanada and is made with black masa (corn).

This place was amazing!!! It was recommended by a friend who lives in Guadalajara and it is definitely worth a 5 star review ... It is a very popular restaurant, so I would recommend making a reservation if you are going on a busy night ... We did not have reservations and went late on a Thursday night, luckily they had a cancelation and were able to accommodate us... The staff was amazing, they were very helpful and gave us great recommendations of the most popular items on the menu... We were a group of 6, so we ordered a few different items on the menu to share and try a little bit of everything... The drinks were all very good, they had their signature drinks with tequila or mezcal that were all tasty and refreshing... All the food we ordered was so good, my favorite were the shrimp tacos with crickets in them... We also ordered crickets, and the larva... Some of the items on the menu are different than the things we are use to eating, but even though we stepped out of our comfort zone everything we ate was amazing.. I definitely recommend trying this restaurant and all the authentic gourmet dishes they have..

The best of plans can get hijacked, but this story has a happy ending. We needed to have our COVID testing done one day before flights. Finding an approved location and time slot was its adventure but it necessitated that we partake in dinner close by the pharmacy and testing. La Tequila with its high number of Google reviews cross-referenced with the 4 stars and 75 Yelp reviews seemed to be the logical choice. I decided to make reservations 24 hours in advance for a party of three. I shortly received a confirmation of my reservation via WhatsApp. Check, check, and check. What could go wrong? Flash forward to the next day and everything that could go wrong did including receiving a cancellation WhatsApp test message from La Tequila while on the route in an Uber to the restaurant. This is a stunning restaurant The outside facade is grandiose and proper and being 7 pm on a Friday, it was busy. There were a few waiting patrons inside and in the lobby. We let the staff know about the cancellation and were very accomodating. Ignacio was our waiter and was very patient, courteous, and polite. We all ordered drinks and the chips and salsa arrived. The salsa was not spicy but was packed with flavors. The salsa was not your typical Pico de Gallo gringo salsa which I was very thankful for. We ordered through our phones and noticed immediately that the La Tequila's menu offering offered many of Mexico's regional and culturally significant dishes. Mole from Oaxaca Beef seasoned with traditional flavors of Jalisco Fish seasoned and prepared with traditional flavors of Veracruz Molcajetes in a variety of options including vegetarian. We decided to order two appetizers Chalupas and Seared Grilled Cheese These Chalupas Poblanos are not your TB chalupas made famous with a trio of speaking Chihuahua. Three green and three red, in a fried tortilla with shredded beef and onion. Excellently seasoned and just the right portion of onions and meat. We noticed from a distance that a server was performing tableside guacamole and we each look at each other, laughed, and commented that it was a rip. Within minutes, it was us who were the fools. It's not tableside guacamole but rather table-side salsa for our meals There are about six containers and a Molcajete, the 'salsa guy' will ask you if you want mild, medium, or spicy. For a moment, I entertained the spicy, but we all agreed on medium. The 'salsa-guy' takes all the ingredients and makes fresh salsa right before your eyes. This is not new for me as my wife prepares salsa twice a week to my delight but to watch someone else do it was pure magic. Congratulations to the 'salsa-guy' as the salsa was a fireworks display of favors and even garnered two thumbs up from my wife. As a medium spicy profile, it still had some kick and would be tolerated for most. NOTE: I regularly have my wife use habaneros combined with other chiles to make salsa. While I could drink this salsa most Americans would just need a spoonful for their dinner. Moments later the second appetizer arrived. Burnt cheese. Grilled panela cheese. With green sauce, avocado and tortillas tatemadas al comal. Strips of grilled cheese arrived with their salsa. This salsa was bright green and had chucks of avocados that gently waded inside. Our culinary adventure continued with the two Molcajetes. One was a meat combination, and the other was vegetarian. Technically it was veganized. We asked for the panela cheese that usually is bathed in the Molcajete to be placed on the side. Not only was the request granted but understood and respected. My veganized Molcajete was filled with grilled mushrooms, grilled bell peppers, grilled cactus, and grilled squash plus other veggies. The salsa broth inside was a beautiful symphony of flavors. My wife and daughter enjoyed their skirt steak, chorizo, and other ingredients plus a huge stick of melting panela cheese. Ignacio with the help of another server expertly placed these medium-sized volcanic rock dishes that were boiling on our plates with precision and care. We were all given large serving spoons to 'fish' out our contents from the Molcajetes. It was one of the best veggies Molcajetes I have ever had. I left no trace of salsa inside We concluded our dinner with a dessert. It was a simple yet complicated Corn Flan Custard. A very Mexican flan prepared with natural corn. La Tequila is a destination dinner and had I listened to my wife who reminded me of the sign above the door at the entrance that warns of having a bad attitude is not welcomed, I would have been more forgiving and friendly. In the end, the staff was professional, courteous, and overall, the service and the food were Yelp 5 Star worthy.

    Barbacoa

Super good! Our hotel was a block away and we were tired of driving and we sure lucked out. This place is wonderful. Dinner began with a complimentary cup of shrimp soup and salsa made tableside and freshly made chips. My wife ordered a margarita which she said was the best she ever had! She loved her fish taco appetizer. I ordered the chapulines quesadilla on a blue corn tortilla. I thought the hearty taste of the tortilla covered up the meatiness of the chapulines- boo! We both ordered the barbacoa that was terrific. I was so full but I pushed my way thru because I didn't want to leave anything. The complimentary tequila icecream Great service, lively vibe- a real winner!

    Hibiscus cocktail

The last time I went here, was my favorite one. The cocktails are really good with a mexican twist, I loved the hibiscus tequila one. What I really enjoy on this restaurant is when the waiter custom makes a salsa depending on our table taste. The service is always on point. We order the "Chile en Nogada" that is a very special dish in mexico and everyone loved it. And the best dessert is the "Volcan de dulce de leche" too good not to order it. The restaurant has a very elegant vibe.

    Poblanas Chalupas
    Jacky C.

A very nice restaurant with a very nice atmosphere. I came here with a party of 4 with a reservation set. The staff members are very accommodating and even got me an English menu as I can barely survive reading their Spanish menu. I got the Suckling Pig in Pulque Sauce. The pork was baked slowly to preserve it's juices, in a sauce made of dried chilies and pulque. The meal was served with guacamole and refried beans. I also got the Poblanas Chalupas where you get six chalupas: three green and three red served on fried tortilla with shredded beef and chopped onions. This with their handmade chili sauce which they make in front of you makes this taste amazing. When they made the chili paste, you get to choose how hot or mild you want it and of course I went for the spicy side. Overall, a very lovely experience where you get to catch up with folks, friends, family while you get to experience some good food. Would recommend this place to anyone.

Dos Margaritas...or I'm seeing double after one.

Food Review: Los Chilaquiles - Guadalajara, Jalisco…read more On my recent visit to Los Chilaquiles, located right in the heart of Guadalajara, I arrived a bit past the traditional breakfast hour, but I was seriously craving some good huevos rancheros and a comforting café de olla. Thankfully, both absolutely hit the spot. Café de olla is a classic Mexican coffee traditionally brewed in a clay pot (olla), infused with cinnamon and sweetened with piloncillo--a deep, rich unrefined cane sugar. The result is a warm, aromatic, slightly spiced cup that feels like a hug from Mexico itself. Their version was delicious. To complement it, they offered me conchas con nata, which was such a treat. Conchas are iconic Mexican sweet breads known for their soft, airy interior and crunchy shell-like topping. Nata is the thick, silky cream that forms when fresh milk is gently simmered--rich, smooth, and perfect for spreading. Together, it's a simple but heavenly pairing. Right away, I noticed that the atmosphere of the place feels warm and inviting--relaxed, friendly, and full of that authentic Guadalajara charm that makes you want to stay a little longer. The service matched the atmosphere perfectly: attentive, kind, and genuinely welcoming. They started me off with a trio of homemade salsas, along with Mexican crema, queso cotija, and a crunchy homemade tostadita. Everything tasted fresh and thoughtful. As I looked around, I even noticed photos of well-known personalities who have visited, which makes sense--the food and experience truly stand out. Overall, Los Chilaquiles delivered amazing flavors, excellent service, a great atmosphere, and that authentic touch that makes breakfast in Guadalajara unforgettable. Highly recommend stopping by if you're in the area.

It has always delivered a great experience, but unfortunately, today was a disappointment. Our group of four ordered the following: * Panela asada: Excellent. * Empanadas: Excellent. * Churrasco: Very disappointing. The quality of the meat was poor, with too many nerves that made it hard to cut and chew. * Chinchulines: Excellent. * Milanesa: A letdown. The steak was paper-thin, overly dry (reminiscent of beef jerky), and the underside was burnt, making it even harder to cut. We had to request a steak knife to get through it. * Chicken: Excellent. * Desserts: Excellent. The total bill came to $2,900 MXN (about $145 USD) plus tip. By Mexican standards, this is considered a high-end meal, but the quality of certain dishes did not live up to the price. While the restaurant has been a favorite of mine in the past, based on this recent experience, I cannot recommend it.
