I have gone to Maria Elena's bakery since I was a little girl they have the best homemade chorizo…read moreand cakes. You could possibly want. I got a birthday cake from here every single year until I moved out of Saginaw. They also make homemade tortillas in house and other delicious pastries.

These might be the best carnitas I have had since leaving California! That is worthy of five stars…read moreall on its own. The pork pulled apart into thick strands, it had great texture, some bits of tender fat, some bits of crisped edges. Fantastic stuff. If I wanted to pick nits, I might prefer a smidge more salt and I would have killed for a wedge of lime to squeeze over the whole thing. But the brightness of the salsa rojo did the job nicely of bringing this taco into balance. That salsa had some kick, and was also a delightful compliment to the barbacoa taco, which I suspect was actually barbacoa de cabeza. What a delightful surprise! Rich and meaty, and oh so tender. The tacos might actually suffer from having too much meat in them. I went for three, but two would be more than sufficient. Even one would be a mighty hefty snack. With double corn tortillas, you could even do the clever trick of splitting one taco into two... but then you risk the dreaded tortilla break. While I was looking forward to the lengua, that was the least exciting of them all. The tongue was fattier than I was accustomed to eating, and it was lacking that deep beefy flavor I adore. Had there been some lime, and perhaps a greater helping of onions and cilantro, it would have helped to lighten those bites. But so it goes. Not every taqueria / bakery does everything well. Oh yeah... do not sleep on the chicharon on the counter! Those are sold by the pound. I grabbed three pieces, and they were perfect for snacking on while my tacos were being made. In fact, they may be the reason I wasn't able to get through that third taco. So crisp. So savory. So juicy with fat. So satisfying to chew. Marvelous stuff. Just make sure to limit yourself to what you can eat in the moment, they are best when warm and fresh! All of this in Saginaw? What an unexpected treat! Thank you Yelp for helping me find a respite from my responsibilities that brought me up to this town for the day. I wish I lived closer, but if I'm back in the area, I'm coming back for carnitas and chicharon. No doubt!
