You will definitely find cheese in everything and really good cheeses from all over the world but this place is more about the hype than anything else. The servers were knowledgeable enough to make recommendations on wines to pair with each cheese, which cheeses to select based on the flavor palate I was looking for. The portions on the cheese plate are TINY, however, so don't go in and be hungry unless you're ready to break the bank. Decor and atmosphere get an A+; I could be on a date, or grabbing lunch with an acquaintance (which I was), or holding a business meeting. It's not a casual bar - slightly more upscale, though I was ok in jeans. My experience with service was that it was slow and inattentive, even by Spanish standards, but that could also be due to the fact that my dinner buddy did not speak a single word of Spanish so he insisted on the English-speaking server. It's worth a trip for the experience, though there are several other restaurants in the area that might be better suited to the casual traveler.

The salmon toast was like any other salmon toast. Hadto add olive oil to change up the taste and made it better. The veal meatballs were awesome. It came medium well on top of potatoe straw fries. The fondue goat cheese tasted fresh and paired well with the veal meatballs. The turkey cordon blue (tapa snack) tasted really good. Should've ordered a bigger portion, but wasnt feeling like eating a lot if they were dry. Its not called turkey cordon blue, but it taste and looks like it should be. It has cheese on the inaide and on top aswell has ham in the inside. Jamon y queso pizza, tasted ok. The hamon and cheese slides right off, due to the really thin crust. The wagyu burger came medium rare, this tasted great. The sauce on the top could've been changed, but the burger itself was cooked perfectly and the meat was tender. Last was the pig cheeks in red wine sauce. Came with the straw fries and fried fruit chips. Thw red wine sauce was not overpowering which tasted great and the pig cheeks had enough proportion of fat and meat. The fruit chips paired well witb the red wine bitter taste with the crisp sweatness of the chips.

If I were you, I will try to visit with a group of friends, preferably of an even number. Why is that? because of the concept of the place. The idea is to share a meal in a group setting. You have a couple of boiling bowls heated by electric burners that are split into an spicy and regular broth. The broth is very simple and they serve all the ingredients on the side for you to cook in the boiling bowl as you please. Do keep in mind that some things take between 3-5 minutes to cook and be ready, so make sure to ask and place these on the boiling broth before the others. the beef just takes some seconds and the noodles take little time as well. The shrimp and brine and meatballs as well as the dumplings are some of the things that you might want to wait a while. I added some pictures of the stew and the boiling broth so you get an idea. They have a peanut sauce, if you're not allergic, it's the best thing that you can have in this place. I almost licked the bowl where the peanut sauce came from and asked for seconds. They also have a tea that's very popular in the Mongolia/China area of the world, that's really good. It's their version of southern sweet tea but not quite as sweet, though it's very tasty. Im adding a picture of the tea for your reference. We were a group of 6 people and the bill was around 90Euros which comes up to about 16 per person, not an expensive meal in madrid specially with drinks and an experience that you don't get in many places. If you are still not quite sure, the idea is very much like a Korean Barbeque but in a soup.

Servers spoke perfect English and helped guide us with food and wine. The bread was seriously incredible - this is the stuff you'll pay $12/loaf for in LA. (Reservations can be made in person or over the phone only - while we were eating, I saw the phone ringing off the hook and their reservation book being added to.) When it was time for our reservation we were greeted and seated by a nice man who turned out to be the chef/owner himself, Marcos Gil. He went through each item on the menu with us and suggested wine pairings for our selections. We ordered the leeks, salmon, veal cheek, and venison, a daily special. They were all incredible! Each dish was not overly sophisticated and let the main component truly speak for itself. We could genuinely taste the craft and care that went into each dish. The dessert was no exception. Despite being a modest, unassuming restaurant, the space was intimate and inviting and the service was excellent along with the food. Worth more than any three-star Michelin meal any day.
