I tried Mexican chocolate, red velvet, peanut butter chocolate chip, and Funfetti. The cookies are baked fresh, and it was about a 10 minute wait. The wait was so worth it! The cookies come out piping hot. They were crispy on the outside and deliciously chewy in the middle, and each cookie had a distinct flavor. My favorite was the Mexican chocolate chip, which was cinnamon sugar, dark chocolate chunks, and a little bit of spicy cayenne. My second favorite was the peanut butter cookie with peanut butter and chocolate chips- just a really good peanut butter cookie! The Red Velvet and the Funfetti were a tie for me. In addition to made to order cookies, Boulder Bakes has cupcakes, cake slices, ice cream, coffee, cookies cakes, and tomato soup/grilled cheese. I'm happy to say Boulder Baked is open until 9:30 Sunday-Wednesday and until 10 Thursday-Saturday making it a great spot to grab a treat late at night. They specialize in offering gluten-free and vegan cakes and cookies. The interior is a little small and there's not much seating inside so ambience is why I would give a 4/5 star rating- otherwise the treats are delicious. This is a spot that is better to grab and go or get takeout. Online ordering is available!

I really like the oatmeal chocolate chip but the double chocolate and chocolate explosion are catching my eye. I can't wait to try them. When you order the cookies, you can order them normal baked half baked or over baked. This way you can get the cookies as crispy as you'd like it. I did regular baked and it was perfectly gooey right away. Once it cools down, it means really soft so it's perfect for later as well. They also offer coffee, hot chocolate and teas. The hot chocolate was super good and I can't wait to go back for a latte. They also offer cake slices, larger cookies, and plenty of other desserts. This is a great stop for any type of sweet treat or drink. I also saw that they offered grilled cheese and tomato soup. I will definitely be back to try this as well.

Between the pastry case that looks like it belongs in a museum and croissants so perfectly golden brown they almost appear artificial, every item seems to have been crafted with an almost unreasonable amount of care. I ordered the breakfast croissant, a black coffee, and a blueberry muffin. Now, I firmly believe a bakery's coffee should be judged the same way a singer is judged performing acoustically: no fancy tricks, no backup dancers, nowhere to hide. If your black coffee is excellent, everything else is built on a strong foundation. Thankfully, La Belle passed that test with flying colors. The breakfast croissant somehow managed to be both delicately flaky and impossibly soft at the same time. Every bite left a trail of evidence on my shirt that I regret absolutely none of. I'm fairly certain the croissant received more quality control inspections than my first apartment. The blueberry muffin was equally impressive, striking that magical balance between homemade comfort and professional craftsmanship. But if I had to describe La Belle in a single word, it would be love. You do not create food this visually stunning and effortlessly delicious unless the people behind it are deeply passionate about what they do. Every pastry, sandwich, dessert, and loaf of bread seemed to radiate the kind of attention to detail normally associated with Swiss watchmakers, NASA engineers, and grandmothers preparing for a family gathering. They never came to the table. I went to the counter to inform the cashier of the frozen croissant. I was told that the croissant had been defrosting for 30 minutes. Update: After letting it defrost it was tasty! The croissants may be made "daily" in house --but the experience I had was not a same day made croissant.
